Toffee Cookies

Hello! My name is Carter and it is my first time using Instructables. I found these cookies off the web, and they looked like a very fun and easy cookie to bake, and they were! These cookies are very sweet and caramelly, so if you have a sweet tooth these cookies are for you! I have baked a lot of things in the past like cookies, muffins, and cakes. My dad is in the business of cooking and that's what inspired me to bake. Along the way, I have learned many tips and tricks from family and friends that have helped me become a better baker and person. I hope you enjoy! :)

Gather Your Ingredients and Tools

Ingredients**

2 1⁄2 cups all-purpose flour

1 teaspoon baking soda

1⁄2 cup salted butter***

3⁄4 cup granulated sugar

3⁄4 cup brown sugar

1 tablespoon maple syrup

2 Eggs

2 cups toffee pieces (home-made butter toffee or store-bought bits)

Tools

An oven****

12 x 18 Baking sheet

Parchment or silicone pads

Electric handheld mixer

Two bowls (preferably medium-sized)

Measuring cups + spoons

Sifter

Ice cream scoop (for portioning)

*Read the recipe before baking

** Keep your workspace organized and tidy

***Take the butter out an hour before baking to soften

****Make sure there is nothing in the oven

Preheat the Oven

Preheat the oven to 350 degrees Fahrenheit (176 degrees Celcius).

Sift Together the Flour and Baking Soda

You will need:

  • a sifter
  • a medium bowl
  • flour (2 1/2 cups)
  • baking soda (1 tsp)

Put the sifter over the bowl and add the flour and baking soda (As seen above). Then lightly tap the sifter so it falls through into the bowl. Set aside.

Mix the Grantulated Sugar, Brown Sugar, and Maple Syrup.

You will need:

  • granulated sugar (3/4 cup)
  • brown sugar (3/4 cups)
  • maple syrup (1 tablespoon)

Put the brown sugar, granulated sugar, and maple syrup into a bowl. Get your handheld electric mixer, turn it on and mix the ingredients together.

Whisk the Butter Then Add to the Mix.

You will need:

  • butter (1/2 cup)

Get your electric hand-held mixer and whisk the butter* (just mix the butter by itself). Then add to the mixture of granulated sugar, brown sugar, and maple syrup and mix.

* The butter is well mixed when light yellow.

Add the Eggs to the Mix

You will need:

  • 2 eggs
  • Mixture of sugar, maple syrup, and butter

Crack the eggs then break it open, letting the yolk and egg white go into the bowl (do this twice). Then, mix the eggs into the mixture using the electric hand-held mixer.

Add the Toffee Bits to the Mix

You will need:

  • toffee bits (2 cups)
  • Mixture we have been making in the last few steps

Put the toffee into the mix, then stir the toffee bits into the mix with your electric mixer.

Add the Wet and Dry Ingredients Together

Get the wet mixture (sugar, maple syrup, butter, eggs, toffee pieces), and your dry mixture (flour and baking soda), and mix them together with an electric handheld mixer.

Portioning the Cookies

Put the parchment or silicone pads on the baking sheet. Get a rounded spoon*, and scoop the cookie dough and place on the baking sheet**.

* I prefer to use an ice cream scoop for the portioning because the cookies come out bigger.

** Keep the cookies two inches apart so they don't touch while in the oven.

Baking the Cookies

Get your baking sheet and place it in the oven for 10 - 12 minutes*.

* If the cookies look soft after baking, that's ok, leave them out in room temperature to harden.
