Toasted Rice-Coco Winter Balls (gluten-free Recipe)

Today I'm showing a quick nutritious snack that needs only three main ingredients. These sweet power balls are easy to prepare, store for weeks and are one of my favourite winter munch recipes.

Supplies

Main Ingredients:
500 g rice
250 g grated dry coconut
250 g palm sugar or jaggery
1/2 cup water

Optional Ingredients:
1 tsp cardamom powder
2 tbsp ghee

Other Supplies:
- Muslin cloth or any thin soft cotton cloth that's capable of absorbing moisture
-food processor/mixer grinder
- Mixing bowl
- Thick bottom pan/wok

This quantity of ingredients made 30 small sized balls (as shown in the picture)

Making the Rice Powder



Rinse the rice till it's free of any impurities.

Spread the rinsed rice on an muslin cloth and leave to air dry a little.

Once the rice is less damp, heat up a pan and toast the grains (handful at a time) till they're slightly puffy and turn golden brown.

Grind into a fine powder once cooled down.

You can also use store bought rice powder/flour but this process gives it a different texture and taste.

Toast It Up!

Keep the pan on a low flame and roast the coconut till it changes color slightly. Keep aside.

To melt the palm sugar mix it with half cup of water and keep stirring on low flame till you get a smooth syrup.

Get Balling



Mix all ingredients using your hands to form a dough. Roll into balls of your preferred size.
