Three - Ingredient Nutella Mousse
I know. It says three ingredients in the title but there seems to be a lot more. Let me explain it: for the Nutella mousse itself you only need here ingredients and no more than 5 minutes to make. The rest is just fuss. Topping is optional and of course variable according to your taste and mood.
This time I made a quick berry jam and caramelized nuts in order to have something sour and something crunchy to balance the smoothness of the mousse.
You'll Need
Ingredients of the mousse:
110g Nutella
140 g mascarpone or any other cream cheese (Philadelphia for instance)
120 g double cream
Extras-
Quick berry jam:
150 g frozen berries
1 tablespoon honey
Caramelized nuts:
150 g sugar
3 tablespoons of pine nuts, pumpkin seeds and sliced almonds
Appliances:
Stand mixer
Silicone spatula
saucepan
parchment paper
mortar / food processor
Nutella Mousse
Put the mascarpone and the double cream into the mixer bowl and whisk until thick and foamy. Then add your Nutella and keep whisking until it is fully combined. Transfer the mousse to glasses or ramekins. Done! ✅
Quick Berry Jam
Put the frozen berries in a saucepan, add honey, bring it to boil. Set it aside to cool. Done! ✅
Caramel
Pour the sugar in a saucepan and let it caramelize on medium heat. Many different things are said about the tricks of caramel making. The best advise I ever got was not to stir it until the sugar is completely dissolved.
Pour the caramel onto a piece of parchment paper. Let it cool, then break it up in a mortar or using a food processor, until it's like powder.
Caramelized Nuts
Spread the nuts on a parchment paper (you can use the same as for pouring he caramel on), cover them with the caramel powder put it into the preheated oven (180 Celsius) for about 7-10 minutes till the nuts are incorporated into the melted caramel. Cut it into pieces. Done! ✅

Put 1-2 tablespoons of the berries onto the mousse add a piece of caramelized nuts for crunchiness.
