Three Chesse Mac 'n Cheese
This mac 'n cheese recipe is creamy, cheesy, flavorful and easy to make in 30 minutes! Perfect for any week night meal or party, this recipe is sure to become a favorite!
You could use any combination of cheeses and customize it as you wish!
Supplies
1 pound pasta (any pasta is fine: rigitoni, shells or elbows are great)
1/4 cup salted butter
1/4 cup flour
1/4 teaspoon smoked paprika (optional)
1/4 teaspoon salt & pepper
4 oz cream cheese
4 oz sharp cheddar cheese
4 oz pepper jack cheese
2 cups milk
Breadcrumbs to top
Cook Your Pasta
Fill a large pot with enough water to cover your pasta. Add a dash of salt to the water and bring it to a boil. Once the water is boiling, add the pasta and stir. When it is close to being cooked, the pasta will begin to float.
Make the Cheese Sauce
To make the cheese sauce, melt the butter in a saucepan.
Once melted, add the flour, paprika (if using), salt & pepper to the melted butter. Wisk together until a smooth paste is formed.
Add the milk slowing, whisking continuously. It should be smooth.
Once the mixture begins to simmer, add the cubed cream cheese and whisk it together until the cream cheese melts and begins to thicken.
Turn off the burner and add the shredded cheese. Whisk the cheese in, until it all becomes a smooth sauce.
Drain the Pasta
Once your pasta is cooked to your desired taste (al dente is my recommendation), drain the pasta in a colander, then put the pasta in a serving dish
Pour the Sauce and Serve
Pour the cheese over the pasta and stir it all together.
Sprikle your desired amount of breadcrumbs on top to add a nice texture.
Serve your mac n' cheese while it is hot and enjoy!
