The Perfect Key Lime Pie
The perfect, authentic key lime pie recipe is just the right combination of sweet, sour, creamy and crispy while never using food coloring or eggs and certainly never being frozen. Pies that have ventured from the following recipe have given Key Lime pie a bad name, for many good reasons.
Key Limes are actually yellow and taste different from the common varieties of limes that you'll find in supermarkets.
Nellie & Joe's makes the best Key Lime juice and it can be found in many good supermarkets around America.
For this recipe you'll need only a handful of ingredients and about an hour to prepare.
Ingredient Checklist
For your perfect and authentic Key Lime Pie, you will need:
- 1 - 9" Graham cracker crust
(of course you can make this from scratch, if you wish, with some butter and graham cracker crumbs)
- 2 cans sweetened condensed milk
- 1/2 cup sour cream
- 3/4 cup Nellie & Joe’s (or other Key Lime juice)

Mix
Mix your ingredients in a large bowl.
I use a Kitchen Aid mixer, at full speed, to mix mine but you can also just use a plain electric mixer, a whisk or fork.
Mix for several minutes until ingredients are thoroughly combined and have a texture similar to marshmallow fluff.
Pour
Pour the mixed ingredients into your pie crust and smooth its surface.
Bake
Bake in a preheated 350f/175c degree oven for about twenty-five minutes (check it after 20) or until tiny bubbles burst on the surface of the pie. Make sure not to brown, your pie; it should be evenly cream colored.
Chill in the refrigerator after baking.
Eat
By this point you've hopefully mixed, baked, and chilled your ingredients to make a perfect and authentic Florida Key Lime Pie.
Serve chilled on its own or with a dollop of whipped cream.
