The Toasted "PPT" Sandwich
Hi everyone! My name is Amory, and to be honest, I have never liked sandwiches. I don't like PB & J, ham and cheese, any sub from Subway...(you get the point!). I was determined to find a sandwich I enjoyed, so I went on a hunt! I eventually came up with a pesto, tomato, and parmesan sandwich. I realize this is close to a similar sandwich with mozzarella, but in my opinion, mozzarela shouldn't be on sandwiches. I wish I could say this is some family recipe from the 1800s, but I made it up last week!

Prepare the Grains!
Toast two pieces of sourdough or rye bread. I used sourdough bread that I made the previous day, but whatever bread you choose works! Set aside the bread for later.
The Pesto
This is my favorite pesto sauce recipe, and I use it for everything (pasta, sandwiches, pizza, and more!). My mom and brother are allergic to nuts, so this recipe is 100% nut-free.
This is the recipe:
1 clove garlic, chopped
1 cup basil leaves, packed
Blackâ…“ cup olive oil or more as needed
3 tablespoons finely grated Pecorino Romano cheese
Kosher salt as needed
Directions: Place the garlic and basil in a food processor or blender and pulse until everything is roughly chopped. Add the oil and pepper and process. Scrape sides and blend more until everything is combined. Add the cheese and pulse until blended. Add salt if desired.
The Tomatoes
Gather your favorite tomato, I used a large sweet tomato from my friend's garden. Slice into thin slices. If desired, lightly salt.
Cheese, Cheese, Cheese!
Find yourself a block of parmesan cheese, and slice away! If you do not prefer parmesan, you can substitute with mozzarella, but I wanted to change things up! Slice cheese into cuts (thick or thin, your choice:)
Assemble!!!
On a clean plate, place your two slices of bread. Using a knife, spread the pesto sauce onto both slabs of bread. Add cheese until both slices are covered. Next, add one tomato, more if desired. Put the two slices together to form sandwich
Decor
This step isn't required!
But if you wish to make your sandwich a bit fancier, I got you! I grow pea shoots, which are just baby pea plants. Grocery stores carry them as well. Chop some pea shoots off the stems and toss on top!
