Drizzle the Virgin Olive Oil into a cast iron skillet

Then turn the oven to 500 degrees and place the pan into the oven. Let the oven pre-heat to 500 degrees and then wait an additional 10 minutes before cooking. This will ensure the pan is at maximum temperature.

Turn the Stove Top to High and leave it on while the oven and pan prepare

Prepare the Steak

With a fork lightly and repeatedly poke the steak until both sides have been tenderized on both sides.

Place the steak in the rub, pressing down and then flip and do the opposite side

Take your hands and press the rub until the entire surface is covered

Now let the rub sit for 15 minutes to absorb into the meat

Sear the Steak

Take the pan from the oven- be careful this pan will be extremely HOT, and immediately place it on the stove that has been on high

Sear the steak on the first side for 90 seconds and then flip it and sear on the opposite side for another 90 seconds

Place Steak in Oven

Once the steak is seared on both sides, immediately take the pan from the stove top and move it to the oven and set the timer for 2 minutes

Check for Perfection

At the end of 2 minutes pull the steak out of the oven and check how cooked the steak is at this point, it should be medium rare, if you desire it to be cooked more, place back in oven for another 30 seconds and check it again.
