Mixing
Preheat the oven to 180°C/350°F.
Mix 2 cups of flour with 2 cups of sugar, 3/4 cup of cocoa powder, 2 tsp of baking powder, 1 pinch of salt, 1 tsp of espresso powder and 1 1/2 tsp of natron in a bowl. Give it a good stir.
Add 1 cup of milk, 1/2 cup of oil, 2 eggs and 2 tsp of sugar. Mix everything and lower the speed of your mixing machine.
Boil water.
Baking
Now pour 1 cup of boiling water into the dough and mix it on highest speed.
Prepare your baking tin. Make sure that you get everything covered with butter otherwise the cake will stick to the baking tin and won´t come out.
Bake the cake for about 35-45 minutes.
*You can check if your cake is done by putting a wooden stick into the
cake. When your stick is still clean when you pull it out your cake is done.
Let it cool down for a few minutes and remove it from the tin.
Cut the Cake
When the cake is cold cut it horizontal into two pieces.
Chocolate Filling
Now you need to prepare the chocolate filling.
Mix 1 cup of cocoa powder with 1 1/2 cups of butter, 5 cups of confectionarys sugar and 2 tsp of vanilla sugar. Add 3 tablespoons of milk. Mix it and add milk as needed until it´s a smooth paste. Add 3/4 of it to the lower piece of the cake. Use the rest to decorate the top of the cake (See next step).
Fill It
Put the second cake on top of the filing. Fill the rest of it into a icing bag and decorate the cake with it.
