The Leeward Pointer

In the 1970's I was stationed at Guantanamo Bay Cuba. We were limited in our food shopping to just the Navy Commissary. One day I wanted something different and decided to get creative. I started by looking in our cupboards where I found a can of Corned Beef, then looking in the refrigerator I found an onion and pepper along with sliced American cheese. My next search was in the freezer where I found a frozen garlic bread. After about an hour of thinking I created the Leeward Pointer. This has become a family favorite and i hope you enjoy it also.

I have been a long time subscriber to Instructables and this is my first submission. I am a retired Navy Chief Petty Officer with 21 years of service.

Ingredients

There is no brand preference on the ingredients. I use what i have on hand.

Canned Corned Beef, Sliced American Cheese, Frozen Garlic Bread, Bell Pepper, Onion

Cookie sheet, Foil, Bamboo Skewers / Tooth picks.

Preparation

I place the Corned Beef in the refrigerator for 30-60 minutes to firm it up for slicing. Be extra careful opening the can, the edges of it are like a razor and can give you a nasty cut.

Slice the Bell Pepper into strips roughly 1/4 inch wide.

Slice the onion into rings.

Lay the Corned Beef on its side and slice into roughly 1/4- 1/2 inch slices, you should have enough slices to cover the bottom half of the bread.

I use a cookie sheet lined with foil to cook the sandwich on.

Place the bottom half of the bread on the cookie sheet.

Place slices of Corned Beef end to end the length of the bread.

Add the Bell Pepper strips along each side or on top of the meat.

Add the onion rings on top of the meat and peppers.

Add the slices of American cheese on top covering the entire length of the sandwich.

Now place the top half of the bread on top.

Secure the bread and filling in place with either bamboo skewers or tooth picks.


Cooking and Serving

Place the assembled sandwich on the foil lined cookie sheet.

Some times the sandwich will lay over on it's side, to prevent this I sometimes place pieces of rolled up foils to act like braces to keep it upright. Which as you can see I forgot to do. LOL

Cook the bread according to the packages temperature and time. I always add a few minutes to the baking time because of the ingredients inside the bread.

Remove from the oven and allow to cool a bit.

Slice into pieces that fit your needs and desire.
