The Equation Perfect Pie

In honor of the serious eats pi day contest we are submitting this equation perfect square pie.  After all, the equation calls for pie squared! 

Ingredients

- 4-5 Cups Tart Apples (combination of Granny Smith and Jona Gold works good); Peeled, Cored, and Sliced - Scant 3/4 Cup Sugar - Scant 1/4 Cup Brown Sugar - 1 tsp Cinnamon - 1 Tbs Lemon Juice - Pinch of Salt - 1-2 Tbs Flour - 4 Tbs Butter, plus a little extra to dot the filling

For this pie you will need to follow the pie crust instructable we are submitting - here is the link https://www.instructables.com/id/pie-crust-1/ Quarter and peel the apples.  Then, slice them. be sure to leave them kind of chunky, they soften up later in the recipe. l   

Getting the Filling Ready

  Melt about 4 Tbsp of butter in a large skillet and add the apple slices.  Once they are evenly coated add the sugars, salt cinnamon and lemon juice.  Stir well and then let the apples soften over medium heat.

Once the apples are softened slightly and the mixture is bubbly, add flour until sauce is slightly thickened.  Again, stir well.  Remove from heat.

Pour filling into pan with bottom crust.  Dot filling with butter.  Cover pie with top crust and bake @425 for about 40 minutes or until top crust is golden brown.  You may want to cover the edges of the pie with tin foil to prevent them from burning.
