The Best Double Chocolate Brownie Cheesecake

The Base
I'll break this down section for section starting with the bottom crust.
Ingredients
- 1 1/2 cup graham crumbs
- 1/3 cup melted butter
Mix Them Together
In a medium mixing bowl with the graham, pour in the melted butter and mix it well then spread it in a greased 8 inch spring form pan. Pat it down tight.
For the Brownie Layer
Not really the next layer but the middle instead next.
Ingredients
- 1 pack of brownie mix
- 2 eggs
- 2/3 cups vegetable oil
- 1/4 cup water
How You Makes Brownie Layer
With the brownie mix in a new medium sized mixing bowl, crack in both eggs. Then pour in the water and oil. Whisk with a wire whisk until smooth. Really you are just following the package directions so just read the box.
The Chocolate Cheesecake Layer
Ingredients
- 2- 8oz packs of cream cheese, softened
- 2 eggs
- 1 cup granulated sugar
- 1/4 cup sour cream
- 1/4 cup cocoa powder
- 1 tsp vanilla
- 1/2 tsp almond extract
- 2 tbsp flour
- 3/4 cup of chocolate chips
Cream
Cream the cream cheese in a stand mixer equipped with a whip attachment or in a mixing bowl with a hand mixer. add the cocoa powder and sugar then mix some more.
Eggs and Flour
It's good practice to scrape down the sides with a rubber spatula each time you stop the mixer. Then you can add the eggs and flour. Mix some more.
Final Ingredients
Stop, Scrape again and add the extracts and sour cream. Mix one last time.
Cheesecake Layer
Pour half of the cheese cake mixture over the graham crumb crust and carefully spread it out evenly with the rubber spatula.
The Brownie Layer Revisited
Next pour all of the brownie batter over the first cheesecake layer and spread it out evenly.
The Final Layer
Spread the remaining cheesecake mixture over the brownie batter. You can get all fancy and swirl the top two layers together if you feel inclined to do so. Then sprinkle the chocolate chips on top.
Bake That
Bake the cake in a oven heated to 325 degrees for about 45-50 minutes. the centre of the cake will be a little firm.
Cool, Cut and Enjoy
