The 4-minute jalapeno popper pulled chicken sandwich is going to become one of your go to sandwiches! It seriously only takes 4-minutes to make, uses pantry staples, and tastes incredible.

Supplies

Here is what you'll need for 4 sandwiches

  • 2 cans of Canned Chicken
  • 1/2 c. Ranch Dressing
  • 1/2 c. Shredded Cheese (cheddar or Mexican blend work great)
  • 1/2 c. Bacon Bits (you can use more or less)
  • 1/2 jalapeno (or other similarly spicy pepper), sliced into wheels or finely chopped (your preference)
  • 1/2 tsp. Minced Onion (optional)
  • Burger buns or Pretzel Buns
  • Salt & Pepper to taste

If you want to make a 'fancier' version of this sandwich, you can substitute chicken that you've cooked and shredded (recipe can be found at the end of this Instructable) and you can cook your own bacon. But this is a SPEED CHALLENGE, so we're in this for the quickest option possible!

Assemble Your Ingredients

Grab a mixing bowl and get everything out of the pantry and fridge - total time 1 minute.

Mix It All Up

Add everything to the mixing bowl EXCEPT the jalapeno (unless you finely diced it, if you finely diced it, add it to the bowl). Stir until well combined. Total time: 1 minute.

Taste for Perfection

Take a little taste. Need more salt? Pepper? Jalapeno? Ranch flavor? Add more! The choice is yours. If you need more ranch flavor, but don't want to add ranch dressing, add a dash of dried parsley, oregano and garlic, and onion powder (only a DASH, a little goes a long way and you can always add more). Total time - 1 minute.

Put It All Together

Take a scoop of this delightful blend of flavors and put it on your bun. I chose brioche buns and sliced my jalapeno into wheels. Total time: 1 minute.

BONUS TIP: If you want, you can microwave this mixture for about 15-30 seconds and make it a hot sandwich.

Total time to make project: 4 minutes

The "fancy" Version

The fancy version uses chicken that you cooked and shredded yourself.

Here's how to do this using frozen chicken:

  1. Fill pot with water
  2. Take 2 chicken breasts, frozen, and add to the pot.
  3. Put on stove, on high, and cook until water boils
  4. Turn temp down to medium.
  5. Set timer for 15 minutes.
  6. When timer goes off, check chicken for correct internal temperature.
  7. Let rest for 5-10 minutes.
  8. Shred in bowl using 2 forks (or other shredding tool).
  9. Enjoy!
