Teriyaki Meatloaf

I am visiting my daughter and her husband and because he works a lot of overtime and she is going to school, I have volunteered to do all the cooking. My son-in-law does not like change, making it a real challenge to modify recipes, especially his favorite ones. This recipe was inspired by the recent contest here. 

My son-in-law's favorite meatloaf," has been modified by adding sprouted grain bread crumbs instead of regular, parsley, and fresh vegetables instead of canned tomatoes , vegetable broth instead of milk, and a low ingredient teriyaki sauce instead of using a mixture of three different condiments and sugar. I wanted to make the recipe with more whole foods using less processed ingredients. Follow through to see if it passed his taste test.

Ingredients and Utensils

Please note that this recipe calls for lean ground beef. I made a grocery list for my son-in-law and he did not buy lean ground beef which surprised me, because he always buys the lean. You will have much better results using lean ground beef because it will shrink less making a beautiful loaf.

Recipe:

1 Pound lean ground beef
1 Beaten egg
1 Slice of Sprouted Grain Bread broken into small pieces
1-2 stalks of celery finely chopped
1 Bell Pepper chopped
1 Bunch of small green onions with tops chopped
1/2 Cup chopped parsley
Teriyaki sauce I used Tastefully Simple yum!
Whole sesame seeds
Himalayan Pink Salt , sea salt, or regular salt
1/2 cup vegetable broth ( I make my own by reserving the broth when I cook vegetables and freeze it. )
I used three small loaf pans but 1 regular size will be fine if you don't have the small ones. You will need to add more time when you bake the larger loaf.
Bake 325 degrees F for 45 minutes to one hour

Preparing

Preparing the ingredients:

Clean, chop, and dice vegetables ( I used a little over 1/2 level cup of each of the vegetables)
Beat egg slightly
Break bread into small pieces


Add Ingredients

Add the ingredients to the hamburger:

Place the hamburger into a bowl and break it up a bit.
Add all the vegetables reserving 1-2 tablespoons of the celery, onions, and bell peppers for the garnish.
Add egg to the mixture.
Add salt and mix well.

Form Into Loaves

Form the loaves:

Oil the pans
Form into individual loaves as shown ( makes 1 large or 3 small )
Top lightly with Teriyaki sauce


Bake

Bake the loaves:

Bake loaves at 325 degrees F for 45 minutes to one hour.
5 minutes before the meatloaf is done, warm the teriyaki sauce in the microwave or on top of the stove.
Drizzle a little sauce over the tops of the meatloaf.
Sprinkle tops with sesame seeds.
Top the meatloaf with the fresh celery, onions, and bell pepper.
Serve hot

I was very surprised my son-in-law gave it two thumbs up. We tease him because he has a lot of rules to making food. We are trying to help him reduce the amount of carbs and fat  because his blood sugar is too high.I recently posted a vegetarian meatloaf that passed his taste test using his favorite meatloaf recipe also! I just might go for three.
