Like tater tots and waffles? Why not combine two great food creations into one fabulous idea 🤔 Tater tot waffles!!! Perfect for any meal! Build your next eggs benedict on one in place of the English muffin. How about a lunchtime sandwich? Steak salad on top of a waffle instead of with the fries? Or like I did, with chicken, cheese, and veggies in a savory sauce. Flavor them anyway u like. The possibilities are endless! Even good with strawberry jam 😋
Supplies
2lbs russet potatoes
Salt
Pepper
2 Tablespoons white flour
Seasonings of your choice--I used onion powder, chives, chopped jalapeno, and a little shredded cheese
Oil of choice--I used olive

Peel the potatoes and cut into 1" chunks. Put them in the bowl of a food processor with some salt and pulse to a fine rough chop (1/8 to 1/4" pieces). Pour on to a kitchen towel. Roll the towel up and twist it to squeeze as much liquid out of the potatoes as u can. Empty the potatoes into a bowl and microwave for about 2 minutes on high, stirring once halfway through. U want them partially cooked. Stir them again when done, and allow to cool for a couple of minutes. Add some salt and pepper, the flour, and your seasonings of choice. Stir to combine.
Time to Waffle!

Heat up your waffle iron and brush it with oil. Put about 1 cup of the mixture on the hot iron, spread it evenly, and press the lid closed. Cook the waffle until crunchy and browned. Remove to a plate and keep warm in the oven on 200 degrees while u finish cooking the rest.
Create the Plate and EAT!

Use tater tots waffles as a base to build your meal upon. This time I cooked some chicken breast in a flavorful broth, added some frozen corn and broccoli, cream cheese, and shredded fiesta cheese and poured it on top. A little cottage cheese and dilly beans finished the plate. Delicioso! Next time, Pulled Pork 😋
