Tasty & Easy to Make "Green Rice" With Spirulina

This dish has been given the "oh, it's really good" seal of approval by the kids on my high school tennis team.  They are wary about "healthy" food and don't care if it's good for you.  Everytime we are travling on the road, I prepare something that is vegan and tasty.  The looks of this kinda freaked them out (being so green from the Spirulina), but they did try it and really liked it.  I even had requests to make this numerous times because they liked my "Green Rice". I was really surprized when we had a Christmas potluck at the courts, they asked me to make my "Green Rice". It is so easy and quick to prepare and it is vegan, gluten-free, good for you, and yummy!

Spirulina is a blue-green algae that is available in powder and tablet form.  The kind I use is grown right here on the Big Island of Hawaii in Kailua-Kona. It is a dietary supplement . On the bottle it says " Spirulina Pacifica supports cardiovascular, eye and brain health, boosts immunity and energy.  It is the most complete food source in the world with over 100 nutrients, 60% protein content, the highest levels of carotenoids, and high in antioxidants know to promote health and longevity." I just wanted to post this info for those of you who don't know what Spirulina is.

This dish can be served as a vegan main dish and complimented by some carrot sticks, steamed veggies or a nice slice of crusty bread.

Ingredients

Brown Rice - 2 cups (long grain or short grain)

Firm Tofu (1 block)

Olive Oil (couple of teaspoons)

Bragg Liquid Amino or Tamari (or Soy sauce)

Powdered Spirulina (1 teaspoon)

Onion (1/4 of a sweet Onion - Maui Onions if available)

Prepare Rice

Wash and cook rice

Prepare Tofu

Prepare Onions

dice 1/4 of Maui Onion or sweet onion
(Maui Onions are usually large so if it's not available, use a small regular onion)

Cook Tofu

In a skillet, add a scant amount of Olive Oil and saute diced sweet onions until light brown.  Add diced tofu and stir fry.  Add seasonings:
a few dashes of tamari (or soy sauce) and a few sprinkles of sugar. Stir around until flavor is absorbed.

Mix Together

Put hot rice in a large bowl.  Add 1 teaspoon powdered Spirulina and toss well. Rice should be coated well with green spirulina.

Add Olive Oil

Add 2 teaspoons Olive Oil to rice mixture and stir well.

Add Braggs or Tamari

Add Braggs or Tamari to taste.  It's individual taste that matters - some like it less salty, some more.

Add Cooked Tofu

Last step - add the cooked tofu and toss.
