Prepare Your Strawberries
Start by washing your berries well and dry them completely with paper towels. Now skewer them. Dry them again after you’ve skewered them to make sure they’re completely dry. Now set them aside.
Boil Sugar and Water
Pour the water and sugar into the pan on medium heat. Stir until dissolved halfway. Stop stirring increase heat to medium high and let boil. Once it has reached a boil set a timer for 15-20 minutes.
Test the Syrup
Test your sugar syrup for readiness by chilling a metal utensil in ice water, then dip it like it’s fruit. If the sugar dries immediately then you’ve reached the right temperature and you’re ready to make Tanghulu!
Dip Your Berries
Remove from heat and dip berries immediately in your sugar syrup mixture. Tap gently to drip and carefully place your skewers in a cup to dry. Try not to let any of the berries touch each other
Repeat until all berries are covered. Now wait 10 minutes for them to harden.
