Tanghulu
Learn how to make the popular Chinese street food/snack, Tanghulu. It is essentially a candy glass surrounding fruit. The fruit can vary with strawberries and grapes being very popular. The traditional fruit used is the Chinese Hawthorn.

Supplies
Ingredients:
- 4 cups of sugar (800g)
- 2 cups of water (480g)
- Fruit
Tools/Equipment:
- Wooden skewers
- Pot
- Ice cold water
- Candy thermometer
Prep the Fruit
Begin by rinsing the fruit well and drying them. Then if you like, cut off the stems of the strawberries. You can also just leave them on if you want.
Then take some bamboo skewers and place 2 to 4 fruits on each skewer, depending on how large the fruit is and how much candy glass you intend to make.
Make the Candy Glass
Time to make the candy coating which is candy glass. Pour the sugar into a medium to large pot along with the water. Set the temp to medium-high and let the sugar melt undisturbed until it reaches 300F/150C which is the hard crack stage. This part takes 25 to 30 minutes or so.
NOTE: You can prep the fruits while the sugar is heating.
Dip That Fruit
Remove the hot sugar, and I mean hot, DO NOT TOUCH IT. And start dipping the fruit. It helps to hold the pot at an angle to make it deeper for the fruit. Completely cover the fruit and let the excess drip off then dip it into a bowl of ice cold water. This will harden the candy glass within seconds. Remove it from the bowl and place it in a tall glass to dry.
