Taco Soup
This is one of my all-time favorite soups to make, and I always make it as soon as the cooler weather hits. This recipe is very simple and only takes 30 minutes! This recipe is just to my liking, but you can adjust it and make as much as you want. I hope you like it.
Supplies
You will need.
- 1 pack of ground beef
- 1 yellow or white onion
- 1 can of tomato paste
- 1 can of black beans
- 1 can of rotel
- 1 packet of taco seasoning
- 1 packet of ranch seasoning
- 1 can of Tomato paste
- 1 tbs of minced garlic
- Chili powder, cumin, paprika, oregano, salt and pepper
- Cook ground beef in a large pot along with chopped onion and stirring occasionally until browned and adding and garlic during last few minutes of browning. Drain excess fat (I use a strainer.)
- Cover pot with lid and simmer 30 minutes, stirring occasionally.
- Stir in tomatoes , tomato sauce, chili powder, cumin, paprika, oregano, ranch dressing mix, taco seasoning and season with salt and pepper to taste.
- Add in black beans or any beans of your choice and cook until heated through.
- Add 1/2 cup water to thin soup if desired.
Then serve warmed until desired toppings.
