Taco Lasagne or Recycled Leftovers

It's October, those who know me know that means HAUNT BUILD ! We're never sure how many people will show on any given night but you can be assured that around 8oclock they will be HUNGRY. A crock pot full of meatballs one night, one night beef stew, the other night I made a crock pot full of taco meat (about 4lbs) and ended up with almost half leftover..what t9o do?...

Whats in It ?

taco meat, leftovers, I made using 3lbs of ground beef and 1lb of ground pork along with steak sauce, 2 packets of taco seasonings and a combination of my own spices including chili powder, cumin, smoked paprika, garlic powder, onion powder, dried garlic and onion flakes, mrs dash steak seasonong, mrs dash pork seasoning, poultry spices

 refried beans

 cheese dip (velveeta cheese and salsa)

 crushed tortilla chips

chopped black olives

shredded cheese

 soft tortillas

  As usual please feel free to add or subtract ingredients to fit your family and pantry

Cheese Dip

 I cubed about half a large block of velveeta  cheese and about a 1/3 cup of salsa microwaved and mixed. Note: this is a shot of the leftovers  BONUS: Spread the cheese dip on a soft tortilla and wrap it around a hard taco shell then fill as you want.. YUM

Refried Beans?

refried beans aren't really refried, in fact in this case they aren't fried at all !
 
 one can of light red kidney beans, drained
 
 1/2 stick of butter
 
  2 tablespoons of chopped garlic
 
  1/2 teaspn ground cumin

  3/4 teaspn smoked paprika

  1/2 teaspn chili pwdr

  Heat on high on microwave for 4 minutes, use a glass to mash the beans then cook another 3minutes on high

  ok..there is probably a tool for mashing beans but I don'
t have one, I do have plenty of beer glasses for some reason though

I microwaved the soft tortillas for 40 seconds, laid several in the bottom of a baking dish and smeared them with the cheeese diip, then I added a layer of the meat mix and topped that with chopped black olives and shredded taco cheese mix. I then added another layer of tortilla, smeared that layer with the mashed beans and more of the meat mix, then I spooned on the rest of the cheese dip and crushed a couple handfuls of ranch flavored tortilla chip from a blue bag and finally topped it with more shredded cheese and popped it in a 325 oven for 45 minutes until the top was nicely browned

allow the dish to cool then slice and serve.top with sour cream, salsa, shredded cabbage or shredded lettuce, guacamole or ?
