TORTILLA PIE
Layers of tortilla, black beans, veg, sweet potato mash and cheese. Served with cilantro lime crema, avocado and salsa. The sweet and spicy layers will have everyone wanting more!
INGREDIENTS
Tortillas (8 small tortillas will make 2 pies- 8 servings)
A small baking pan (a springform pan would work the best but I didn't have one)
Shredded cheese
Avocado
Salsa
FOR THE SWEET POTATO MASH:
1 small sweet potato
2 Tbsp Butter
2/3 cup nutritional yeast
1 Tbsp Cumin
1 tsp maple syrup
Salt to taste
FOR THE BLACK BEAN MIX:
1 Tbsp oil
1 can of black beans (rinsed and drained)
2 small Roma tomatoes (diced)
1 small onion (diced)
1 small sweet pepper (diced)
2 cloves of garlic (finely chopped)
1 Tbsp Cumin
1 Tbsp Chili powder
1 tsp smoked paprika
1 tsp oragano
Salt and pepper to taste
FOR THE CILANTRO LIME CREMA:
1/2 cup sour cream
1/2 tsp garlic powder
Juice of 1 lime
Small bunch of cilantro (chopped)
Bake the Sweet Potato
Stab with a fork or knife
Bake in the oven at 425 for about 45 mins (until soft)
Black Bean and Veg Mix
Heat 1Tbsp oil in a large skillet. First add the onions and cook on medium heat until translucent. Add the garlic, red pepper, tomato, black beans and spices. Cook on medium for 10-15 min. Set aside.
The Lime and Cilantro Crema
Mix together the sour cream, lime juice, garlic powder, and cilantro. Set aside.
Sweet Potato Mash
When the sweet potato is ready remove skin and mash with butter, nutritional yeast, cumin maple syrup and salt.
Layering
Spray your baking pan with cooking spray and start layering. Start with a tortilla, spread the sweet potato mash. Add a layer of the black bean mix and then sprinkle with cheese. Repeat this 2 more times and then finish with a final tortilla on top. Brush the top with oil to get it nice and crispy.
Cut, Garnish and Enjoy!
Let the pie set for about 6-7 min before you cut into it. Serve with the lime crema, avocado, salsa and lime.
