TOMATO, EGG AND SWEET ONION SANDWICH
One of the first things my future husband used to tell me about was a delicious sandwich that his family would make every Spring and Summer when the new crop of sweet Vidalia onions and homegrown tomatoes were available. I must admit.... I had never heard of that combination and was a bit skeptical especially since I'm not a fan of raw onion. One day when we were with his family, they were eating these sandwiches. So, I thought what better time to try it? Well, I can truthfully say, I was impressed. The combination of fresh farm eggs, juicy homegrown tomatoes and the crowning glory...... a slice of sweet Vidalia onion. Oh my!!! Sandwich perfection! I hope you'll try this sandwich and then you can look forward to Spring when the Vidalia onions and juicy tomatoes are ripe for the picking!
INGREDIENTS...
1 sourdough hamburger roll, sliced
4 tablespoons butter, divided plus 1 teaspoon
2 extra large eggs
Salt and pepper (to taste)
1 slice tomato
1 slice sweet Vidalia onion
1 - 2 tablespoons Miracle Whip (NOT mayonnaise)
SUPPLIES....
Cutting Board
Small mixing bowl
non-stick 10-inch skillet
pancake turner
1 kitchen knife
1 soup spoon
1 fork
1 sharp knife (not shown)
TOAST THE ROLL....
Place your skillet over medium/high heat. Spread the cut side of each half of roll with 1 tablespoon (each) of butter. Place buttered side down in hot skillet and cook for 2-3 minutes or until nicely browned and toasted. Place on serving dish and set aside.
BEAT EGGS....
Crack eggs into bowl and whip with fork until well combined and foamy.
PREPARE SKILLET FOR EGG....
In same skillet, add the remaining 2 tablespoons of butter. Let melt.
ADD EGG .....
to hot, buttered skillet and let egg spread to cover bottom of skillet.
COOK EGGS UNTIL....
sides start to congeal and become firm..... add salt and pepper to taste.
FLIP EGG....
When egg is cooked enough to handle, gently flip over so the other side can cook. Let cook for about 2 minutes and then cut into quarters.
PREPARE ROLL.....
Butter one side of roll with about 1 teaspoon butter. Spread about 1 -2 tablespoons of Miracle Whip on other side of roll. (Please note: we like Miracle Whip because the tang and sweetness breaks up the richness of the eggs and butter. Feel free to use mayonnaise if you prefer)
BUILD YOUR SANDWICH...
Place cooked egg on buttered side of roll......
THEN ADD...
the tomato slice.....
TIME FOR THAT SWEET ONION....
Place the onion slice on top of the tomato slice and spread Miracle Whip on the other half of the toasted roll.
FINISH YOUR SANDWICH...
Place "lid" on your sandwich and your done!!
