Sweet Potato Carrot Pie
This recipe is super easy to make and healthy to, did i mention it's low fat? you can use any pie dough that you like, I just used a simple one I found off the internect. Enjoy!
You'll need:
filling:
2 median sized sweet potatoes (cooked)
2 median carrots (cooked)
1/4 cup brown sugar
1/4 cup milk
2 eggs
Dough:
1 1/2 cup plain flour
1/2 chilled butter
3 tbsp cold water

The DouGH!
Preheat the oven to 180'C, line a tart tray with baking paper and sheet aside.
In a bowel, pinch together the butter, flour and water to form the dough. Refrigerate for at least 1 hour.
Once thats done roll out the dough and place it carefully in the tart tin. Use a fork and prick some holes into the bottom of the pan, blind bake it! 15 minutes with pie weights (or beans/ rice) and 5 minutes with the weights.

Mash It!
In a food processor, blend the carrots and sweet potatoes until it forms a smooth paste. Then add in the sugar, milk and eggs. Blend until creamy.
Take out your pie base and pour the pie filling into it, you can even it out slightly if you are the perfectionist <3. Bake for 30 minutes, you'll know when it's done when the filling has hardened slightly, take it out of the oven and as hard as it is, allow it to cool before serving. You'll love this dish, it'll smell out of this world!
