Sweet Thai Bacon Jam Grilled Cheese

Who doesn’t love a grilled cheese sandwich? Once you try this new-fangled version, it will be your new favorite! So easy and flavorful, the combination of Dijon mustard and two cheeses provide the perfect framework for the sweet and spicy bacon jam in the middle. Plus, the golden, buttery bread adds the classic tasty crunch on the outside that makes this sandwich irresistible!
Ingredients:
2 slices hickory smoked bacon, halved
2 tablespoons unsalted butter, divided use
½ of a medium yellow onion, diced
4 tablespoons Thai-style sweet chili sauce, divided use
2 slices white sandwich bread
2 teaspoons Dijon mustard
2 oz. block (from an 8 oz. pkg.) extra sharp Cheddar cheese
2 oz. block (from an 8 oz. pkg.) mozzarella cheese
Supplies
10-inch non-stick skilet
spatula
butter knife
Cook and Crumble Bacon
For bacon jam, in a 10-inch non-stick skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain then coarsely crumble or snip into ¼-inch pieces with kitchen shears.
Finish Bacon Jam
Wipe out skillet and add 1 tablespoon of butter and diced onion. Cook over medium heat for 5-7 minutes until onion begins to brown. Add bacon and 2 tablespoons of chili sauce. Stir and cook for 1-2 minutes until bacon and onion are glazed. Remove from heat and place in a small bowl to cool.
Start Grilled Cheese
For grilled cheese, wipe out skillet again. Heat over low heat. Melt remaining tablespoon of butter and brush evenly on one side of each bread slice. Turn bread over and spread each slice with 1 teaspoon Dijon mustard. Place bread, butter side down, in skillet.
Add Cheese
Cut block of cheddar cheese into six slices then place evenly on one slice of bread. Repeat for mozzarella cheese, adding to second slice of bread.
Finish Grilled Cheese
Once cheeses begin to sweat, add bacon jam evenly on mozzarella cheese. Carefully add cheddar-topped slice, cheddar side down, on bacon jam. Use a spatula to press down to adhere bacon jam to cheeses. Increase heat to medium and cook for 1-2 minutes more per side or until golden brown.
Serve Grilled Cheese
Remove to a cutting board. Cut sandwich in half diagonally. Arrange sandwich halves a plate. Place remaining chili sauce in a small dish on the side for serving. Garnish as desired. Serves 1.
