Sweet & Sour Chilli Tofu

http://delightfulvegans.com/recipe/sweet-sour-chilli-tofu/
I love the taste of sweet and sour. A while back I was making a quick and easy meal for Josh and I for lunch with the ingredients we had on hand and it ended up tasting incredible! We've recreated it a few times since, and thought we would share it with you all. We even made a little video on our YouTube Channel (please subscribe to us!) which you can check out below:
Who else loves pineapple in savoury dishes!? It really makes this Sweet & Sour Chilli Tofu. Pineapple is also great on pizza and burgers! It's wonderful in sweet dishes too! (try out our Hummingbird Cake!)
Sweet Chilli Sauce has only been a recent addition to my kitchen, but holy moly, isn't it good!? It's such a great condiment to have!
Tofu is a great source of protein for vegans, as well as iron, calcium and a variety of vitamins and minerals. It's great to give it some flavour, as it doesn't have much taste on its own. We use tofu in quite a lot of our cooking and a few recipes on the blog include it. If you like tofu, try out our Vegan Tofu Lettuce Cups, Bahn Mi Rolls, Messy Tree Sandwiches or Tofu and Silverbeet triangles.
We served our Sweet & Sour Chilli Tofu up on long grain white rice - but brown rice would also be good - or noodles! This recipe would be great in a noodle dish!

What You Will Need

250g hard tofu
1 Tbsp peanut oil
1/4 tsp garam masala
1/2 tsp cumin powder
Pinch of chilli flakes
1 spring onion (chopped)
1 Tbsp ginger (chopped)
1/2 cup red capsicum (diced)
1/2 cup pineapple (chopped)
1 1/2 cups white cabbage (chopped)
1 tomato (diced)
2 Tbsp sweet chilli sauce

In a non stick fry pan heat up the peanut oil. Add the tofu, garam masala, cumin powder and chilli flakes. Fry for around 7 to 8 minutes, or until a lovely brown colour. Set aside.

In the same pan, add the spring onion, ginger, red capsicum, pineapple and cabbage. Cook for around 5 minutes.

Add the tomato, the cooked tofu, and the sweet chilli sauce. Stir through for another few minutes.

Serve it up with white or brown rice!
