Sweet Porky Goodness

Hey everyone! Time to make some delicious pork tenderloin. This was one of the most interesting recipes I have managed to pull off in a while so I hope you guys enjoy!

Ingredients

1. Pork Tenderloin - About 10oz.

2. The all glorious and all important BACON - 1 pack

3. Yellow Onion - 1 Medium

4. Fresh Rosemary - 1 package

5. Boursin Cheese - 1 2-3oz. package

6. Mushrooms - 1 package (any kind of mushrooms you like)

7. Seasoning Salt

8. Pepper

Flatten That Baby Out

You will need a nice sharp knife for this step. Take the tenderloin and run the knife flat along the long side of the meat about half an inch off the cutting board. Cut the tenderloin to about a half inch from the opposite side. Fold the larger side down and continue this process until the tenderloin is rolled out flat. Watch your fingers!

Bacon Weave. Like a Blanket From the Gods.

So I weaved the strips of bacon together, mostly because it was fun, but also because it holds the bacon together once it is wrapped around the tenderloin.

Pork on Pork.... So Good.

Throw the tenderloin on top of the bacon weave and then spread the boursin cheese over the tenderloin. I chose a garlic herb cheese but you can choose any flavor you like.

Time for Some Sweet Sweet Veggies

Chop those suckers up and fry them. I use coconut oil but that is just a personal choice. I would generally suggest using butter. Cook it all until the mushrooms and onions are nice and tender.

Combine All the Ingredients Into One Glorious Pile of Awesome

This step is relatively self-explanatory. Although, I would suggest letting the mushrooms and onions cool just a little bit before putting them on top of the cheese. That way they won't melt the cheese before it is ready to roll up.

Roll Up That Delicious Log of Meat

I took the long sides of the roll and tucked them in so that the ends of the log were neatly closed in on themselves. It is fairly similar to rolling a burrito.

Optional Step - a Good Glass of Scotch.

Now strictly speaking, this isn't a necessary step. But it does make waiting for this incredible meal more tolerable.

Seasoning the Wonderful Log of Meat

Chop of the sprigs of rosemary nice and fine. This is the point that I mixed in the seasoning salt and pepper.

Season the Meat

I honestly believe that nothing goes with pork like rosemary and seasoning salt. Sprinkle your seasoning all over the meat in an even coating.

Time to Crisp the Bacon

Heat your pan on high and then throw that sucker in. I would suggest placing it with the roll seam side down. That way it seals shut before you start moving it around in the pan.

Brown All the Sides

You will want to rotate the meat so that it browns on all sides. I cooked it about 2-3 minutes per side but that is also dependent on how crispy you like your bacon.

Throw 'er in the Oven

I set the oven at 400 degrees and let it cook for 10 minutes on one side. I then took it out and flipped it and let it cook for another 10 minutes on the other side.

Let It Rest.

It will be nice a juicy so you will want to let it rest for a few minutes (5-10 minutes)

The Grand Reveal

Once you have let it rest a bit, it is time to cut this delicious meat log open. Oohhhh sweet sweet porky goodness.
