Sushi Sandwich & Onigiri With Grilled Salmon

3D Prints of Pressers
To prepare our sandwich and onigiri we will need moulds with pressers. You can print one (we give links to our projects) or you can buy moulds.

To print we used Wood PLA after printing we sand our models and later we wax them properly we used organic bee wax without any additional substances. This will protect us. Always place foil inside the presser is not about safety, but for the easier making of sandwiches or onigiri.
Sushi Rice
At the very beginning, we need to prepare sushi rice is the longest step that needs more time for was & drain, cook, rest, cooling, but don’t worry is not so hard like some people write.
Rice Calculation:
We write calculation of rice which will be enough for make 2 Sandwiches and 1 Onigiri or 3 Sandwiches. Every sandwich required 120g cooked rice. You can cook more rice just keep proportions to cook perfect sushi rice
We will need:
180g Sushi Rice
200ml Water
Cooking Time: 9min
Weight after cooking: 400g
Other proportions:
360g Sushi Rice
400ml Water
Cooking Time: 12min
Weight after cooking: 800g
Or
540g Sushi Rice
600ml Water
Cooking Time: 15min
Weight after cooking: 1.2kg
Wash & Rinse:
Now when we know how much rice we need we must wash them. Place rice in a sieve and wash on cold water. Wash rice few minutes till the water will be clear and leave for rinse water for around 30 min.
Cocking Rice:
After the rinse, rice place in a saucepan and add the required amount of water. Place lid on the saucepan and start cooking. when water starts to boil make heat for minimum and start counting the time required for cooking time. Importantly don’t remove the lid till the rice will rest.
Rest:
When cooking time is finished take off the saucepan from heat and leave for 10 minutes. After this time rice should absorb all water. Durning waiting time we will prepare the seasoning.
Seasoning:
We need to prepare a mixture which we add to rice after rest.
For our rice 400g after cook weight we will need:
Salt 1/2 teaspoon
Sugar 1 tablespoon
Rice Vinegar 2 tablespoons
Mirin 1 tablespoon
Prepare a bowl and wooden spoon for rice best if you have a bamboo bowl is great if not use just a glass bowl. Don’t use any metal bowl vinegar reacts with metal. Place rested rice into the bowl and add mixed mixture mix everything gently we don’t want to damage rice grains. After we add a teaspoon of black sesame and a spoon of white sesame.
Cooling:
Ready-mixed rice in bowl cover using cloth and leave till be cooled. Don’t use the refrigerator when rice is too cold then don’t stick properly.
Now we have ready rice now time for preparing herbs and vegetables which we place inside our sushi sandwich and Onigiri.
Herbs, Vegetables & Fruits
To save little time during rinse rice and cooling we can do other steps like this you will save a lot of time. In this step, we write what herb, vegetables and fruit we used in our sushi sandwich and onigiri.
We all know how to cut which herbs, vegetables, fruits. Please look at the first picture of how we cut all of them. Below we write which cut technique we used for each indegriends.
Rocket Leafs - Chiffonade cut
Parsley - Chiffonade cut
Dill - Chiffonade cut
Radish - Julienne cut Cucumber Julienne cut
Avocado - Slice
Preparation Salmon & Marinade
The first thing we have to do with our salmon fillet is washing. We clean our fillets from the husks and rinse the fish only in cold water. We dry our salmon using paper towels and start preparing the marinade which we will rub the fish.
These are the ingredients of our marinade:
2 cloves of garlic;
2 teaspoons of lemon juice
2 teaspoons of grated lemon zest
salt to taste;
½ teaspoon ground black pepper;
a few sprigs of fresh rosemary;
2 teaspoons of teriyaki marinade;
4 salmon fillets around 400-500g
Combine chopped garlic, juice, zest, salt, pepper, finely chopped rosemary and teriyaki marinade. Rub the mixture over the fish and let sit for 15-30 minutes.
Now we need to prepare our grill we used an electric grill, but feel free to use your outdoor grill.
Grilling Salmon
Ok, time for grilling our marinade salmon we used an electric grill because we live at a flat, but you can grill outdoor if you want. Our electric grill needs 10min to be ready for our meat. On outdoor bbq, you need to grill 3-5 min on the side.
We already prepared everything for our sushi sandwich and onigiri now time to build them.
How to Build Sushi Sandwich?
We prepared everything for the sushi sandwich now time to build them for this we need our presser or some square mould/cutter 8cm. We need to cut some foil to place inside of presser and now we start to build the sandwich.
Please also check photos for step by step build.
- The first layer must be 60g of cooked rice. Keep hand wet to prevent stick rice to hand.
- Next layer we spread a little bit of wasabi paste
- Spread Mayonnaise on your sandwich
- Add cucumber
- AddRocket Leaves
- Add a layer of radish
- Add layers of herbs (parsley and dill)
- Place few slices of avocado.
- Add our grilled salmon
- The last layer of our sandwich must be again 60g of cooked rice
Like you see we prepare a big sandwich to press everything. If you use your square then use your hand to press the sandwich. Ok, already pressed sandwich take of gently with foil. Prepare on table sheet of nori and take off sandwich from foil. Place sandwich in the centre like on photo and start pack sandwich in nori like a gift take one corner and move to centre wet your finger and wet nori to glue next corner on centre. When you finish the wrap sandwich use the same foil and wrap full sandwich and leave for 10 min. After this time to cut, simply cut in half and remove foil. That it! finished our Sushi Sandwich serve with soy sauce. Enjoy! Time to prepare Onigiri.
How to Build Onigiri?
What is Onigiri?
Onigiri is balls of rice, usually wrapped with nori seaweed and containing a meat or vegetable filling. Much like sandwiches in the West. Time for preparation. Get our onigiri presser and cut some foil to put inside now we are ready for build onigiri.
Like with a sushi sandwich you can check photos for steps.
- First layer 60g of cooked rice just this time this rice should also be on walls you can use a little bit from second 60g.
- Spread wasabi paste
- Spread Mayonnaise
- Add layers of herbs ( Parsley and Dill)
- Add radish
- Add rocket Leaves
- Add cucumber
- Add slices of avocado
- Add salmon
- Close Onigiri with layer rice
Ok, now we can use the second part of our presser or hand. Press everything together and take off from the mould. Cut the strip of nori and using a wet hand stick to Onigiri do how you prefer.
