Surprise Rainbow Pie
Surprise!!! Its Pie Noon!
Have you ever wanted to celebrate an occasion and shock your guests with the WOW factor? Well now you can! I introduce to you the Surprise Rainbow Pie! This pie is specially constructed to disguise itself as a normal pie/cheesecake, but little do your guests know the inside is layered with rich rainbow cream cheese filling to shock and delight everyone who eats it! This delectable sweet treat will be the talk of the town and guests will be requesting it for future events! From the thick and buttery graham cracker crust all the way to the fluffy frosting on top this is the best pie you will ever have!
Supplies
Mixing Bowls, springform pan, spatulas, six small mixing bowls, food processor, measuring cups, measuring spoons, microwave, a fork, handheld mixer, freezer, cookie scooper, piping bag and tip (optional).
Ingredients for the Surprise Rainbow Pie
Ingredients for the Graham Cracker Crust
- 1 box (14.4 oz) of graham crackers
- 12 Tablespoons (3/4 cup) of salted butter (melted)
Ingredients for the Rainbow Filling
- 1/2 cup cold water
- 2 Tablespoons of unflavored gelatin
- 4 (8 oz) blocks of cream cheese (softened)
- 2/3 cup of sweetened condensed milk
- 1 (24 oz) bag of white chocolate chips
- 1 teaspoon vanilla extract
- Food coloring (colors optional)
Ingredients for the Fluffy Frosting
- 2 (14 oz) cans whipped fluffy white frosting.
Crushing the Crackers
Begin by gathering 1 box of graham crackers and 12 Tablespoons of salted butter. Once all the ingredients are gathered break up all the graham crackers from the box and place them in a food processor. Place the lid on the food processor and begin grinding and chopping up the graham crackers until the contents are all fine crumbs. After all the graham crackers are crushed, place them in a large bowl or measuring cup.
Butter It Up
After the crushing of the crackers, its time to butter up the crust! Begin by placing 12 Tablespoons of butter in a microwave safe dish and cook until fully melted.
Stir It Up
Once all of the graham cracker crust ingredients are ready to go we can make the crust. Begin by pouring the melted butter into the bowl with the crushed up graham crackers and stir until well combined. The mixture should start to clump together.
Preparing the Pan
Once the mixture is ready, its time to grab a springform pan. Make sure that the pan is tight and fastened before starting. Begin by pouring the crust into the spring form pan. Using a spatula spread the contents of the crust all around the pan. After the crust is evenly distributed, use your hands or a measuring cup to press the cracker mixture down and around the sides of the pan. You want to make sure that the crust is packed down tightly to ensure a smooth release.
Freeze the Crust
Once the crust is all packed down, freeze the crust for 45 minutes to ensure a solid base for the pie.
Making the Gelatin
While the crust is freezing, its time to start the filling. The first step in this process is to make the gelatin mixture for the filling. Begin by filling up a microwave safe measuring cup with 1/2 cup of cold water. Next, measure out 2 tablespoons of unflavored gelatin and pour into the cold water. Use a fork to mix the contents until everything is dissolved. Once everything is incorporated, set the mixture aside for 5 minutes.
Heating the Gelatin
After the gelatin mixture has set, microwave the mixture for 45 seconds. Once it is done, set aside to cool for 5 minutes.
Mixing the Cheese
While the gelatin cools, it is time to gather the ingredients for the cheesy pie filling. Gather 4 (8 oz) blocks of softened cream cheese and 3/4 cup of sweetened condensed milk. If the cream cheese is still cold, you can place it in the microwave for 30 seconds. Begin by placing the cream cheese and sweetened condensed milk in a mixing bowl together. Grab a handheld mixer and mix the ingredients until light and creamy. Set aside and move on to the next step.
Melting the Chocolate
After mixing the cream cheese, grab 1 (24 oz) bag of white chocolate chips and pour into a microwave safe dish. Cook the chocolate in the microwave in 30 second intervals until fully melted. Set aside to cool for 3 minutes.
Mixing the Filling
After all the ingredients are prepped, it is time to mix them all together! Grab the bowl with the cream cheese mixture and use as your main mixing bowl. Pour the gelatin mixture into the bowl. Next measure out 1 teaspoon of vanilla extract and pour into the mixing bowl. After the white chocolate has finished cooling down it is time to add it to the cream cheese mixture. Use a fork or spatula to pour the white chocolate into the mixing bowl. Once all of the ingredients are in the bowl it is time to mix! Using a handheld mixer, cream together all the ingredients until you reach a smooth texture.
Distribute the Filling
Once the filling is all mixed up it is time to split up the filling. Grab six small mixing bowl and a cookie scoop. Begin by placing 3 scoops of filling in each bowl. See next step.
Coloring the Filling
Gather the food coloring of your choice and create six colors in total. Mix each bowl well to make sure the color is fully incorporated.
Stacking the Colors
Once all the filling colors are made it is time to stack! Grab the fully chilled pie pan from the freezer and pour the first color of your choosing into the pie pan. I chose to do rainbow order, but you can do whatever order you want! Use a spatula and spread the contents all over the bottom of the crust. Once the first layer is poured in the pan, place it in the freezer for 15 minutes.
Stacking Colors Continued...
Once the first layer is done freezing, its time to add the second layer. Pour the next color of your choice on top of the first frozen layer and spread the filling using a spatula. Make sure the entire first layer is covered. Place the second layer in the freezer for 15 minutes.
Continue the Color Process
Keep continuing the color stacking process by spreading and freezing each layer until you come to the final layer. After you pour the final layer, freeze for 30 minutes.
Frosting the Pie
Once all the layers are frozen it its time to add the frosting. Gather whipped frosting cans and evenly spread a large layer of frosting over the top of the pie. Make sure that you fully cover the colored layers to keep it a surprise. This part is optional, but you can decorate the top of the pie however you like. Freeze the pie for 3 hour before serving.
Release the Pie
Once the pie has frozen for 3 hours, it is now time to release the pie out of the springform pan. Unclasp the pan and gently pull the edge off the pan to reveal a perfectly rounded pie!
The Surprise!
It is now time to reveal the surprise! Cut into the pie and enjoy the look on everyones face as they see the colorful surprise waiting for them!
