Super Tasty Blueberry Bread

Who doesn't love a good quick bread. I mean they're fast, pretty simple, and almost always guaranteed to please. Recently, my eldest daughter followed me around asking me to make this again, so I thought I would share.

This recipe started out as my go to banana bread recipe (with or without candied pecans). However, about 3 months ago, the kids asked for it and I had no soft bananas. I did however have a surplus of frozen blueberry's, so I improvised a bit and the results were great. So much so, that now when they ask me to make this type of bread, it's this recipe they want.

The Ingredients

1/4 Cup Butter (1/2 Stick) Softened

3/4 Cup White Sugar

1/4 Cup Brown Sugar

2 Eggs

2 Cups Self Rising Flour

1/2 Tea Spoon Salt

1/2 Tea Spoon Baking Soda

1 Tea Spoon Vanilla

1/2 Tea Spoon Orange Extract

1/2 Cup Milk

2 Cups Frozen Blueberry's

Step 1...

Cream together the butter, sugar, and eggs.

Add the flour, salt, baking soda, vanilla extract, orange extract, and milk. Stir until combined.

Next add the blueberry's and continue to stir until they are thoroughly incorporated.

Step 3...

Finally transfer the mixture into a well greased loaf pan. Bake at 350 degrees for 60-70 minutes or until the top is brown. You can also do a toothpick test by poking the center of the loaf. If the tooth pick is clean when removed, it's done.

*I used coconut oil to grease the pan, however most cooking sprays will work

**This recipe also doubles as a great blueberry muffin recipe. Just pour into a muffin tin (muffin cups optional) and bake at 350 for about 30 minutes or until brown.

Step 4...Remove, Cut and Enjoy!

The title says it all! Remove the bread from the oven, let sit for about 5 minutes and remove form the pan. Cool on a wire rack until you can't take it any more.

Finally, cut into the loaf and enjoy.

*My daughter waited about 10 minutes on this one. It's great warm, at room temperature, or toasted. We have even used it to make french toast and to be 100% honest, it was nothing short of spectacular (insert fireworks here).
