Super Quick & Simple Low Carb Almond Biscuit

This is a super simple, super quick, low-carb biscuit recipe made from only 4 ingredients ... and it's ready in 90 seconds!
Supplies

Only four main ingredients to build the biscuit!
- Almond flour (1/2 cup)
- 1 egg
- 1/4 teaspoon baking powder
- 1 tablespoon melted butter
Optional ingredients to mix in...
- Bacon bits
- Cheese
- For a dessert biscuit, add a sprinkle of chocolate chip pieces!

Use a microwave safe bowl, similar to the one shown here. This one turned out to be the perfect size.
Melt a tablespoon of butter to liquid. (You can add more butter if you want the biscuit a little less dry).
Add in the flour, egg and baking powder. The baking powder helps the biscuit rise, like a bread.
Mix thoroughly.

Microwave (covered) on high for 90 seconds*.
Kids! You can do this too, but get a grown-up to handle the cooked biscuit out of the microwave. It will be HOT!
Tip the biscuit out of the bowl onto a place. Again, the bowl AND the biscuit will be hot.
*Note: if you decide to mix in extra ingredients (bacon bits is my favorite), you may need to increase cooking time by a few seconds, give or take. You'll come to find a sweet-spot of cooking time.

Slice the biscuit in two. You can let it cool down before cutting and adding toppings, so it's easier to handle.
Add the toppings of your choice! It's a sandwich/biscuit/muffin now, so you can do with it what you'd like. One of the kids likes pepperoni and cheese (on mayo), the other sliced turkey. Options are endless!
Oh, and it's low carb (before toppings)! You can keep it low carbon course, sticking to meats/cheeses for toppings.
That's it! I can put these together and feed the kids in under 5 minutes. So easy it's almost criminal! And it's quite filling, too.
