Super Fast Pizza from Scratch - no knead, no mixer, easy clean

This is possibly the quickest (& laziest) pizza - from scratch - in the world! Like a proper pizza, the base is made from a yeast dough. But unlike proper recipes, I don't knead or proof the dough. The result is a half-pizza-half-focaccia-bread creation. This is quirky & totally unauthentic, but very easy & delicious! Like all my other recipes, no mixer or food processor required and very little cleaning up involved!

Please see the video above for a clear step-by-step demo. Written instructions below are accurate but not as easy to follow as the video.

Step 1: Turn the oven on to preheat. 230 C (450 F) or 200 C (400 F) for fan oven.

Step 2: Line a baking tray (approx 30 x 20cm / 12 x 8in) with aluminum foil. Put a knob of butter on it, about 10-15 g (1 tablespoon). Put the tray in the oven for about 20 seconds to soften the butter & heat up the tray. Spread the butter around with a spoon to generously grease the lined tray. Set aside.

Step 3: Make the dough. In a bowl, mix together: 250 g (2 cups) plain (AP) flour + 1 & 1/2 teaspoon instant yeast (aka 'easy bake' or 'yeast for machines') + 1/2 teaspoon salt + 1/2 teaspoon sugar (optional). Then add 170 ml / g (5 & 3/4 fl oz) slightly warm water. Mix to form a sticky dough.

Step 4: Put the dough on the greased baking tray. Using a spoon to shape it slightly and flip it over. Now the top the dough lump is also greased. Place a large piece of plastic wrap on top and press the dough out with hands to form the base. Set aside.

Step 5: To make the sauce, mix together about 2 tablespoons of tomato puree + 1 tablespoon of ketchup + pinch of salt + generous sprinkle of dried oregano + a little olive oil (optional). Spread onto the base. Top with cheese (I use cheddar). You can customize the sauce and toppings to your liking.

Step 6: Bake in the preheated oven for 17-20 minutes (time can vary depending on oven). Best eaten hot out of the oven. This serves two to three people.
