Super Berry Waffles

The word 'waffle' instantly brings to mind an indulgent and calorific dessert, but not this ultra wholesome full of goodness waffle. This breakfast or even brunch waffle is packed with 'superfoods' to keep you energised through to lunch. Gojiberries, cranberries, blueberries along with other fruits compliment this delicious and flavoursome waffle.

Gojiberries are one of the staple ingredients in this recipe, as they are considered to be the most important 'superfood'. They are also known as Wolfberries, and are known to be high in antioxidants, vitamin A, to improve mood and believed to prevent age-related diseases such as Alzheimer's.

Benefits of the other ingredients used:

Cranberries: Rich in Vitamin C, fibre and antioxidants.

Blueberries: Known to have a positive effect against diabetes, memory loss, excess weight, tumours and blood pressure. Rich in antioxidants and vitamin C.

Banana: High in potassium and vitamin C and low in fat.

Oats: High in dietary fibres, contain chemicals that can hep reduce the risk of developing cancer.

HEALTH WARNING: Gojiberries should not be consumed if you are taking Warfarin.

(No salt or sugar was used in this recipe).

Ingredients (for Approx 8 Waffles)

For the waffles:

1 cup wholemeal flour

1 cup porridge oats

1 teaspoon baking powder

1 cup milk

200g Greek-style yoghurt

2 bananas (ripe)

2 eggs (free range)

30g dry cranberries

30g dry gojiberries

Olive oil to grease waffle iron

For the topping:

Fresh blueberries

Flavoured Greek yoghurt

Making the Batter

In a large mixing bowl, add the milk and porridge oats. Mix well and leave to stand for 5 minutes to allow the oats to soften. Then add the flour, baking powder, yoghurt, and eggs and whisk well to combine ingredients.

Add Berries

Add the cranberries and gojiberries to the mixture.

In a separate bowl, mash 2 ripe bananas with a fork. Remember you are mashing NOT pureeing! Add the banana and give it a good stir.

Making the Waffles: Step 1

Turn on the waffle iron, and grease with the olive oil. Make sure you grease well.

Making the Waffles: Step 2

Put 2 ladel fulls of mixture into the waffe iron (per waffle), or to your preference. Whilst the waffles are being made, heat up some plates to avoid soggy waffles! Wash the blueberries for the topping.

Break Them Out!

Because of the ingredients used, these waffles brown quickly, so keep checking for your preferred level of 'doneness'.

Decorate with the flavoured Greek yoghurt and blueberries, serve hot!
