Summer Rainbow Salad

This is a very nice looking and light salad for summer! I will list some substitutes of the ingredients, and show a homemade strawberry salad dressing which is light, sweet and refreshing.

Prepare Your Ingredients

Since it's a salad, there is no "required" amount of ingredients. You will just combine a variety of different colors, in this recipe, we used:

--Cherry tomatoes (substitutes: strawberry, raspberry, red cherry etc)

--Mini carrots (substitutes: orange slices, papaya etc)

--Sweet yellow pepper (substitutes: apricots, yellow cherry tomato, yellow peach etc)

--Japanese cucumber (substitutes: avocado, kiwi fruit, spinach, lettuce etc)

--Blueberry

--Red Onion (substitutes: red cabbage, grape)

Some people don't like raw onions in the salad, but I like some very thin sliced red onion in my salad. It's a perfect balance with the sweet strawberry dressing, and since it's the last color you only need a little amount -- but if you don't like it, find any substitute you like!

Prep Work

For the ingredients I used, I only need to wash the tomatoes and the blueberries, and slice the cucumber, yellow pepper and red onion. If you use other ingredients, you can also slice them or dice them into small pieces .

Put all the ingredients on a large plate, arranging by the color of rainbow.

Ingredients for Dressing

Of course you can always use your favorite dressing, but during summer we'd like to make some fruity dressing!

For the Strawberry dressing, you will need:

--7-8 strawberries

--1/2 tsp extra virgin olive oil

--1 tsp red wine vinegar

Salt and Black pepper to your own taste.

Make the Dressing

Wash the strawberries and remove the stem. Put all the strawberries in a mixing bowl, and put the bowl on top of boiling water.

Stir the strawberries slightly and it will turn soft after 2-3 minutes, and there will be a lot of "strawberry sauce" in the mixing bowl as well.

Mix the strawberry sauce with olive oil and red wine vinegar, add salt or pepper to your own taste, the dressing is ready to use.

Now Enjoy Your Rainbow Salad!

Before you enjoy it, pour the dressing onto the salad, and also put the remaining strawberries when you mix it as well! The strawberries are delicious and soft!
