Sukka Roti a Traditional Asian Flat Bread and Mixed Vegetables.

Sukka Roti is a traditional flatbread eaten in Nepal, India, and other Asian countries. It is often eaten with soup, vegetables, and sometimes meat. Today we are going to teach you how to make Sukka Roti with Mixed Vegetables. It is super easy and will make enough food for 4 people.

Supplies

The ingredients for Sukka Roti are

  • 2 cups of whole wheat flour.
  • 1 cup of water
  • 1 tablespoon ghee
  • 1/4 tsp salt

The ingredients for the mixed vegetables are

  • 1 yellow squash
  • 1 potato
  • 1 green pepper
  • 2 garlic cloves
  • 1 tomato
  • 1/4 onion
  • 1/2 jalapeno
  • 5 red radish
  • 1 tbsp cooking oil
  • 1 cup of water
  • Ginger
  • Spices like cumin, coriander, and turmeric powder.
  • Cumin seeds

Mixed Vegetables

Chop up all the vegetables. Then put the onions, potatoes, and cumin seeds in 1tbsp of cooking oil. Put in on the stove for 5-7 minutes on medium to medium-high heat.

Putting in the Rest of the Veggies

After 5 to 7 minutes put the rest of the chopped veggies in the pot along with 1.5 tsp of salt and stir fry it for 10 minutes. Also, this is the time to add any spices of your choice. I put in 1tbsp of cumin, coriander, and turmeric powder.

Adding Water

After stir-frying it for 10 minutes your vegetables should be softer. Now add one cup of water and stir it for a minute. When everything is thoroughly mixed let the vegetable cook for 10 minutes.

Finishing the Vegetables.

After you let it cook for 10 minutes you can tell it is done if it is tender and soft. You can then put the vegetables in small bowls and garnish them with cilantro.

Starting the Roti

Put the flour and ghee in one bowl and mix until there are no more clumps of ghee.

Adding Watter

Now pour the water little by little into the bowl. Between the pours mix the wheat and the water in the bowl using a spoon or your hands.

Knead the Dough.

Now after you poured the water you knead the dough this is an important step so don't rush. This step could take up to 7-10 minutes.

Cover the dough with saran wrap and let it rest for at least 30 min.

Pull apart the dough into little circles. These are what will become roti. You should be able to make 9-10 of you followed the instructions thus far.

Flattening the Roti

Now get a rolling pin and some flour. Put a little flour on the circles of dough we made in the last step so that the dough won't stick. Then, flatten the circle of dough to get a roti shape.

Cooking the Roti

Preheat a pan at medium heat and place the roti. Flip the roti when small bumps appear at the edges. Flip again after 10 seconds. Now there should be small air bubbles starting to appear. Apply slight pressure using a paper towel or spatula to the bubbles but not so hard that they pop. Soon the bubbles will expand and make the entire roti a bubble this is a sign that the roti is done. The roti should also change color slightly.

That is all there is to it. Now you have some delicious Sukka Roti. I like to eat my Sukka roti with yogurt as well but you don't need to.
