Sugar-Free Palestine Stained Glass Cookies
These are sugar-free stained glass cookies. This is a great way to combine art with baking. This is a fun and simple recipe to do with common household ingredients, and it has beautiful results. I decided to combine my love of baking and solidarity with Palestine into one art form. I am very happy with the results, and I am sure that with these instructions, you will too!
Supplies
- 2 and 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup monk fruit sugar
- 1 large egg, at room temperature
- Zest of one lemon
- 12 sugar-free hard candies or suckers (I used Zollipops)
Combine the Wet Ingredients
Cream the butter, monk fruit, and lemon zest on high speed for 3 minutes. Add the egg and cream on high speed for one minute. Scrape the edges of the bowl as needed
Add the Dry Ingredients
Add the dry ingredients and mix on low until just combined.
Roll the Dough and Chill
Divide the dough into two equal sections and, using a floured rolling pin, roll the dough on a piece of parchment until it is a 1/4 to 1/8 inch thick. Chill the rolled-out dough for 1-2 hours.
Crush Your Hard Candies
Put your hard candies in a zip-lock bag. With a rolling pin, crush the candy into pebble-sized bits.
Shape Your Cookies
Preheat the oven to 350°F. Remove the cookie dough from the refrigerator. Use cookie cutters to cut out your cookies. Use a smaller cookie cutter to cut out a shape in the middle. I used a 3D-printed cookie cutter that was shaped as Palestine. Fill the inside of each cookie with your crushed candies.
Bake and Cool
Bake for 12-13 minutes. Allow the cookies to cool in the pan for at least 15 minutes to ensure the candies have fully set. Enjoy!
