Sugar Cookies With Pink Frosting

I am usually a griller but I had to step outside the box. This may seem easy to some but it was difficult for me.

Supplies

½ cup butter softened

¼ cup oil

½ cup granulated sugar

2 tablespoon powdered sugar

1 egg at room temperature

½ teaspoon vanilla extract

¼ teaspoon almond extract

2 & ⅓ cup flour

¼ teaspoon salt

1 teaspoon baking powder

½ cup butter softened

2 cup powdered sugar

¼ teaspoon almond extract Use another ¼ teaspoon if you want more almond flavor

1 teaspoon vanilla extract

Pink gel food coloring

Preheat the oven to 350°F and line 2 baking sheets with parchment paper.

Using a mixer fitted beat the butter and granulated sugar for about 3-4 minutes or until light and fluffy

Add the eggs one at a time, beating after each addition, just until combined. Add the vanilla and almond extracts and beat until combined.

In a separate bowl, whisk together the flour and baking powder.

Add the flour mixture to the butter/sugar mixture, mixing thoroughly until combined.

Portion out the dough into 1/4 cup portions and roll each portion into a ball

Bake for 9-12 minutes.

Remove from the oven

Allow them to sit on the baking sheet for about 8-10 minutes before placing them on a cooling rack

While the cookies cool, make the frosting

Using mixer, beat the butter until smooth and fluffy. Add the powdered sugar and mix well. Stir in the almond extract and add the milk one tablespoon at a time. Add 3-4 drops of pink food coloring and mix. Spread some of the frosting on each cookie while they are still slightly warm
