Sugar Cookie Ice Cream Sandwiches

Gather Your Ingredients

Here's what you're going to need:

INGREDIENTS

  • 3 cups all purpose flour
  • 1 ½ teaspoon cream of tartar
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup unsalted butter
  • 2 cup granulated sugar
  • 2 eggs
  • 2 tablespoon milk
  • 1 teaspoon vanilla extract
  • and don't forget your Sprinkles!

Sift Together Your Ingredients

In large bowl, sift together flour, cream of tartar, baking soda and salt. Set Aside.

You're going to want to use a medium sized bowl for this step.

Cream

Cream butter and sugar until fluffy and pale, about 5 minutes.

If you have an electric mixer, be sure to fit with the paddle attachment. Medium speed should do.

The butter should be softened.

For cookies you don't want to cream it for the same amount of time that you normally would for a cake. Cakes need longer cream time to make the mixture light and fluffy, but for our recipe we're going to stop once it's well mixed. This will stop the cookies from spreading too much in the oven, giving them the perfect shape! Less is more!

Add the Eggs

Beat in eggs.

Leave about 30 seconds between each addition.

When finished, scrape the sides of the bowl and make sure everything is well incorporated.

Milk and Vanilla Next!

Add milk and vanilla and blend for 30 seconds.

Remember to blend for the shortest amount of time possible!

Add Dry Ingredients

Add flour mixture and mix on low speed until thoroughly combined.

Finish up with a wooden spoon until it's properly blended.

Scoop It Out

With a cookie scoop, scoop out portions of dough onto a lined cookie sheet.

Leave 2-3 inches between cookies.

Pinch of Sugar

Sprinkle with extra granulated sugar

Bake!

Bake for 10-12 minutes at 350 degrees fahrenheit.

Cool the Cookies

Once cooled, flip your cookies over in preparation for the Ice cream!

Get Frosty

Place a scoop of ice cream on one cookie and flatten it with a piece of waxed paper and top it off with another cookie similar in size!

Jazz It Up
