Sugar Cookie Fruit Pizza

Nothing is better than making a dessert that doesn't require much effort! This bright, fun, and delicious dessert is a great way to enjoy a summer BBQ or any event. The taste of sweetness and fresh fruit fills you with joy!

Gather Your Ingredients

Check to see if you have all the ingredients and set them out. You are going to want:

  1. A roll (or two) of sugar cookie dough
  2. Fruit of your choice (strawberries, blueberries, pineapple)
  3. 2 T of corn starch
  4. 1/3 cup of sugar
  5. 1 t of vanilla extract
  6. 1 cup of unsweetened pineapple juice
  7. Cream cheese
  8. A round baking pan

Prep Your Dough

Preheat your over for 375°. Set your sugar cookie dough onto your 10" round cooking pan. Spread the dough out until the bottom of the pan is completely covered.

Bake Your Dough

Place your pan into the oven and let cook for 12 min. Then remove from the oven and let your dough cool completely.

Mix Up Your Icing

While you let your dough cool, you can mix up your icing. Whip together your cream cheese, sugar, and vanilla in a bowl.

Cover the Dough With the Icing

When the dough has completely cooled and the icing is mixed well, spread the icing onto the dough evenly. Make sure all edges are covered!

Adding the Fruit

Go ahead and clean the fruit you plan on using and get them ready to place on the pizza. I used strawberries, blueberries, and pineapple. Then start placing the fruit on your pizza in a pattern that you like.

Mix the Glaze

To cover the fruit and make your pizza more sweet and delicious, mix together your unsweetened pineapple juice and corn starch. Make sure you stir the liquid well and leave no chunks.

Warm the Glaze

In order for the mixture to thicken, place your mix of pineapple juice and corn starch, in a pan on the stove. Stir occasionally. When the juice thickens up, remove it from the heat.

Spread the Glaze Over Your Pizza

When you remove your glaze from the stove, you want to go ahead and spoon it over the fruit and dough while it is still hot.

Cover Your Fruit Pizza

Cover your fruit pizza with plastic wrap and place it in the refrigerator to chill.

When your fruit pizza is completely chilled, cut it into slices and enjoy!
