Stuffed Zucchinni (without Meat)

Zucchinis aren't my favorite vegetable.But I really like them this way ;)

Again, a warning: I try to do my best, but english isn't my native language.

Ingredients

Zucchini
Tomato
Rice leftovers (optional)
Soy Sauce (or oil and salt if you want to)
Poppy seeds
Red Bell Pepper
Margarine or Butter

Preparing the Zucchini

Cut the zucchinis, first the ends and then in halves. Then carve them with a spoon; I try to form little boats.

Chopping the Others Vegetables.

Chop the tomato and bell pepper into little pieces. You could also add some carrot, and olives.

Now, put the rice, the rest of zucchini, tomato and bell pepper in a frying pan with soy sauce (or oil and salt). Cook it for two or three minutes, until the mixture is juicy.

Preheat the oven, at medium fire.

Put the "zucchini boats" in a pan covered with a thin layer of margarine or butter. Then, stuff them with the mixture you just made. I added some cheese and poppy seeds on top.

Bake the zucchinis in the oven for 30 minutes.

And that's all. Now all you have to do it's eat it.

There are variations, of course. You can add some TVP (Textured Vegetal Proteine). Or make it without the rice and tomato, just the zucchini (that's the way I ate it when my mother cooked it).
