Stuffed Paratha With Green Peas - Potato Masala

Stuffed Paratha is a very famous North Indian food enjoyed by all. These parathas are made from all purpose wheat flour stuffed with spicy potato masala or any other vegetable. Here I have used fresh green peas along with potatoes for the stuffing.

A step-by-step instructable on making this North Indian comfort food at home.

Ingredients

Ingredients

  • 500 grams fresh Green peas
  • Four medium sized potatoes
  • One cup of all purpose flour
  • Two medium sized onions
  • Three or four Garlic cloves
  • An inch long piece of ginger
  • One tablespoon of Cumin seed powder
  • One tablespoon of Fennel seed powder
  • One tablespoon of Red chili powder (Adjust to your own taste)
  • A pinch of Asafoetida
  • Half a tablespoon of Turmeric powder
  • Salt to taste
  • Oil as required (you can use any cooking oil)

Boil the Green Peas

  • Remove the green peas from their pods. You will get about one cup of fresh green peas
  • Boil in medium heat for about five minutes or till the peas become soft
  • Remove from heat
  • Drain out the water and keep it aside

Boil Potatoes

  • Boil potatoes in a pressure cooker for about five minutes after full pressure is achieved in the cooker
  • Remove from heat and allow it to cool
  • Peel the skin
  • Mash the boiled potatoes and keep aside

Onion, Garlic and Ginger

  • Dice the onions
  • Peel ginger and dice
  • Shuck garlic cloves
  • Make a rough paste of garlic and ginger

Make Stuffing

  • Heat a pan in stove and add oil
  • Add diced onions and ginger / garlic paste
  • Cook until the raw smell disappears
  • Add spices including salt
  • Add boiled green peas and mix well
  • Add mashed potatoes
  • Mix well and cook for a few minutes
  • Remove from heat and keep aside

Make Dough

  • Take one cup of all purpose flour in a pan
  • Add salted water and make dough
  • Divide the dough in to four equal parts 

Stuff the Parathas

  • Take a division of dough and spread it flat with your fingers. You can use a little oil on your fingers for this.
  • Place enough stuffing in the middle and fold the dough over the stuffing fully covering it

Cook Parathas

  • Heat a dosa pan over medium heat
  • When the pan is hot enough add little amount of cooking oil over the pan
  • Again with your fingers, flatten the stuffed dough as thin as possible over the heated pan
  • Add little oil on the sides
  • Flip it over using a dosa flipper
  • When both sides are properly cooked, remove from pan

Serve Hot
