Stuffed Chicken With Lemon Butter Mushroom Sauce
This instructable will teach you how to make a chicken stuffed with cheese and prosciutto ham, topped with a lemon, butter, and mushroom sauce.
This recipe is a copycat of Carrabba's Pollo Rosa Maria. The recipe can be found in many variations, however I got mine from my favorite recipe site Robbie's Recipes: recipes.robbiehaf.com/Copycat.html

Ingredients
Chicken breast
Sliced prosciutto ham
Fontina cheese - fresh if you can find it, the softer the better (can be substituted with mozzarella)
1/2 cup clarified butter (see Step 5 on how to make)
3 garlic cloves
1/2 small yellow onion
1/4 cup dry white wine
1 cup mushrooms
4 Tbs butter
1/2 tsp salt
1/2 tsp white pepper
Fresh basil
Lemon juice
--Preheat grill, I used some woodchips to give mine a little more flavor.
**NOT PICTURED - Basil, mushrooms**

Fontina cheese - fresh if you can find it, the softer the better (can be substituted with mozzarella)

Butterflies!!!
Butterfly the chicken breast and set aside for now.
Chop Some Veggies!
-Mince garlic
-Chop onion
-Slice mushrooms
Watch those FINGERS!!!

Start Grillin'!!
Place butterflied chicken breast on grill until cooked thoroughly on each side.
Continue on to the next step while these cook.

How to Clarify Butter
If you are unable to find clarified butter in the store, it is fairly easy to make.
-Melt butter in sauce pan, about 3/4 cup is enough.
-After butter has melted, remove from heat
-As the butter cools, it will separate. You want what is underneath.
-Remove the film from the top leaving the clear butter. An easy way to do this is by running the liquid through a strainer lined with some sort of filter, I used a paper towel (no ink of course)
-Once you get the nice clear butter, carry on!!

-Saute garlic and onion in clarified butter until softened.
-Once softened DEGLAZE the pan with the wine (add wine on high heat and stir)

SHROOMS!
-Add:
Mushrooms
Butter
Salt
White pepper
Saute until mushrooms are tender

Juice It Up!!!
Add lemon juice and fresh basil to the mix
1/4 of a fresh lemon juiced is enough.

Chicken Time!!!
Your Chicken should cooked thoroughly by now, remove from grill
-Stuff with cheese and ham slice.
-Fold closed and hold shut with toothpick.
I placed mine in the oven for a few minutes just long enough to melt the cheese, I recommend doing the same.
***I was unable to find fresh soft fontina cheese so I used slices. If you cannot find fontina cheese it can be substituted with mozzarella.
-Stuff with cheese and ham slice.
-Fold closed and hold shut with toothpick.

SAUCY!!!
Top with the lemon butter sauce and ENJOY!!!!
