Strawberry Fruit Leather and Rollups Only 3 Ingredients and No Dehydrator!
In this Instructable, I will show you how to make strawberry fruit leather and fruit rollups with just 3 ingredients, and no dehydrator is needed. This is an easy and healthy snack to make especially if you don't know what to do with that bag of frozen strawberries in your freezer.

Supplies
Ingredients:
- 4 cups of strawberries, fresh or frozen (approx 600g)
- 2 Tbsp of honey or sugar (30g)
- 2 Tbsp of lemon juice (about half of a medium lemon) (26g)
Equipment:
- Medium Pot
- Spoon
- Sheet pan or cookie sheet
- Silicone baking mat or parchment paper
- Wax paper
- Scissors or pizza roller
Add to Pot
Add the strawberries, honey or sugar, and lemon juice to a medium pot.
Cook
Set the burner to medium heat and stir the mixture occasionally for 10 to 15 minutes (it won't need more than this). It should come to a boil and then reduce as the liquid evaporates. It will get a dark red in color and be a little thick with the fruit being super soft when it is ready.
Blend
Preheat the oven to 180F/82C.
Pour it all into a blender and blend for 30 seconds to a minute until nice and smooth.
Spread and Dry
Pour the fruit leather base onto a sheet pan lined with parchment paper or a silicone baking mat. Spread it out as evenly as possible with the back of a spoon or an offset cake spatula. It dries better the more even it is. You can also try tapping the pan on the counter several times to flatten it out more.
Place in the oven and let it dry for 3 to 5 hours. The amount of time will just depend on how thin the mixture is.
It will be done when it is no longer sticky to the touch and will be a dark dark red.
Remove it from the oven and allow it to cool completely, it will take at least 30 minutes.
Peel and Roll and Eat
Once it has cooled, place a piece of wax paper on top and then flip it over and gently peel off the silicone baking mat. Or if you use parchment paper you can skip this step.
Then roll up the fruit leather and snip it into sections to make fruit rollups. Store them in an airtight container at room temperature for about 4 weeks or so. Enjoy!
