Strawberry Cheesecake Mousse Chocolate Cups

In this instructable, I will show you how to make strawberry cheesecake mousse chocolate cups. These little no-bake cheesecake mousse treats are super yummy, incredibly easy to make, and sure you impress your family and friends. Make them for Valentine's Day and impress that special someone! Ingredients:

1/2 cup Heavy Whipping Cream (120 ml)
3 tbsp of Powdered Sugar (24 g)

8 ounces of Cream Cheese (225 g)

5 Large fresh Strawberries (diced)

1/2 tsp of vanilla extract (2.5 ml)

Zest of half of lemon

1 tsp of lemon juice (5 ml)

fresh fruit for garnish (strawberries, blueberries, etc.)

7 to 9 ounces of chocolate (milk, dark etc.) (220 to 240 g) (doesn't need to be exact)

*** Lemon juice and zest is optional, but I like the bit of tang it adds. Can also substitute with orange zest and orange juice

Tools: paper cups, plastic bag or Piping Bag, muffin pan, spoon, mixer, scissors, bowls, rubber spatula, Zester, knife

Melt Chocolate and Fill Cups

First we need to melt our chocolate. I am doing this in the microwave on high, with bursts of 30 seconds, and then stirring, 30 seconds, then stirring. Until fully melted. You can use candy melts, chocolate bars, chocolate chips, pretty much whatever chocolate you would like to do. Then once melted pour a spoonful or two in your paper cup, and then tilt is so the chocolate flows around the sides. Then just place it back in the muffin pan. You can also use a basting brush and baste the sides with it. Although I kind of prefer the first method. Once done, put the muffin pan in the fridge to cool/set.

Beat Cream

Now we take our heavy cream and beat it with a mixer until nice peaks form. Then add our 3 tablespoons of powdered sugar, then mix some more, and scrape the sides. Set this aside now.

Mix Powdered Sugar and Cream Cheese

Now lets add our 1/3 cup of powdered sugar to our cream cheese, and mix that together really well. Scraping the sides of the bowl as needed.

Add Remaining Ingredients

Next we add our vanilla extract, diced strawberries, lemon zest, and our lemon juice.

Mix, Scrape, and Fold

Now we mix together the ingredients, scraping the sides as necessary. Then once we are done we take our whipped cream and fold it into the cream cheese mixture. Don't over mix it.

Prepare Garnish

Now we prepare our garnish. You can use whatever toppings you like to garnish the top of these. I am using strawberries. Take your strawberry and slice it length wise near the top. Then fan it out. Looks really cool.

Remove Paper Cup From Chocolate Cup

Now we remove the cupcake cup from the chocolate. If you are too rough with it, the sides might break apart. Also it depends on the muffin cup that you use. Silicone Baking Cups work really well. One method that works nicely with the paper cup, is tearing it down a bit, then going around the side with it.

Fill Up the Chocolate Cups

Now we take our strawberry cheesecake mousse and put it in our plastic bag or piping bag. Snip off the tip, and then squeeze it out into the chocolate cups. I go in a circle with it, makes it look a little nicer.

Add Garnish/toppings

Now we add our garnish/toppings. I am adding strawberries, and then powdered sugar. You can also add other fruits like blueberries, black berries, raspberries, etc. It's your treat, make it how you want! ;)
