Strawberry Banana Muffins

Ingredients you will need:
1 3/4 c all-purpose flour
2 large eggs
1 tsp baking powder
1/4 c buttermilk
1/8 tsp baking soda
1/2 tsp vanilla extract
1/4 tsp salt
3 very ripe bananas
1/2 c unsalted butter, melted
1 c chopped strawberries
1 c sugar
Mix the Dry Ingredients

In a large bowl, mix the flour, baking powder, baking soda and salt.
Sugar & Butter

Cream the sugar and butter using a mixer, approximately 3 minutes.
Eggs, Buttermilk and Vanilla

After the butter and sugar are light and fluffy, mix in the eggs, buttermilk and vanilla until thoroughly combined.
Banana

Mash 3 ripe bananas and add to the mixer ingredients. Mix the bananas in until well combined.

Back to the Dry Ingredients

Slowly add your dry ingredients into the mixture, mixing on low speed until they are just combined. Do not over mix.
Strawberries

Cut strawberries into small pieces until you have 1 cups worth. Add them to your mixture and stir with a spoon.
Muffin Pan

Spoon your mixture into a muffin pan that's been coated with non-stick cooking spray. I like to use my mini muffin pan and make bite-sized muffins that are good as a side to a big breakfast or easy to eat while rushing out the door.
Baking Time

Bake in the oven at 350° for about 20 minutes, or until golden brown.

These muffins will satisfy that sweet tooth. This recipe made about 48 mini muffins that lasted me a few days even with the kids eating them constantly.
