Straw-beery Parfait

Because BEER IS FOOD... and it can taste really GOOD, too! ;-D

Ingredients:
  • Strawberry Jello
  • Beer
  • Cool Whip
  • Mandarin Oranges
  • Frozen Blueberries
Prepare the Jello according to the package directions, but substitute the water with BEER. I followed the quick-set instructions and semi-froze 1 cup of beer in ice cube trays.

Chill the prepared Jello in a shallow pan for the Parfait-style dessert or just dessert glasses. (I used both.)

While the jello is setting, drain the Mandarin Oranges and gently fold in a few tablespoons of Cool Whip . Refrigerate.

Defrost a handful of Blueberries and wait for the jello to set.

When the Jello has set, slice it into 1" cubes and build the parfait in layers. 

My construction, from bottom to top :
  • Jello cubes
  • Mandarin Orange mixture
  • Blueberries
  • Mandarin Orange mixture
  • Jello cubes
  • Cool whip topping
This tasty jello dessert can be served any way you serve non-alcoholic jello. It gels up nicely. The consistency is just a tad softer that traditional jello made with water. I like it better and I'm NOT a beer drinker! ;-)

Only half of the alcohol is burned off during boiling. There's still a minute amount of alcohol left in the jello... but no one will ever guess it was made with beer!

I'm sure champagne or wine could also be substituted for the water in jello, depending on their alcohol content.
