Stove Top Cauliflower Mac and Cheese for Two

Mac and cheese: Is there anything better? Oh, but the calories! Stove Top Cauliflower Mac and Cheese provides all the flavor but fewer calories and faster cooking since it does not involve baking.

Supplies

Sharp cheddar cheese (1 cup shredded) - shred your own cheddar cheese (not the packaged stuff).

Milk (½ cup).

Whole wheat elbow noodles (1 dry cup) - healthier!

Dry brown mustard (1 teaspoon).

Cauliflower (½).

Salt and pepper.

Steam Cauliflower

Steaming the cauliflower reduces the amount of water absorbed by the cauliflower.

Cook Noodles

Bring water to boil and cook noodles according to the directions on the package.

Chop and Stir Fry Cauliflower

Chop the cauliflower into small pieces (see images 1 and 2).

Stir fry cauliflower (use cooking spray or oil).

Add Milk

Add milk and continue cooking on medium flame.

Add Cheese

Add ½ cup of cheese.

Add dry brown mustard.

Cover and cook for five minutes on low flame.

Add Noodles

Add noodles.

Add ½ cup of cheese.

Cover and continue cooking on low.

Serve

Uncover and check that the cheese is melted.

Serve.
