Stir Fry Pasta
Years ago I was watching a cooking show where the chef made the simplest pasta dish possible. In a frying pan the chef added olive oil, fresh ground black pepper, salt, and crushed garlic. He sau·té this for a few minutes and pored it over pasta. I tried the dish using butter instead of olive oil and thought it was quite good but it was a little too easy and simple so I decided I could add to this dish.
Like many restaurants, I make large batches of pasta, then coat the pasta in olive oil and keep it in the refrigerator for use later.
Supplies
Gather the ingredients and supplies first.
4 cups (1 leter) cooked pasta
Olive Oil
Mushrooms
1 bunch Baby Bok Choy
3 Baby Sweet Peppers
1 medium Cooking Onion
1 medium Zucchini
4 Cloves Garlic I used my pickles garlic for that extra little zing.
1/2 tsp freshly ground black pepper.
1/2 tsp Sea Salt
A Wok or a 2 liter skillet with a lid, I have Corningware lids that fit my cast iron skillets.
Slice & Dice
This dish is cooked in stages So I prepare the Ingredients and place them in separate containers.
Sea salt, fresh ground black pepper, and crushed garlic in the first container.
Diced onions in the second container.
Diced mushrooms in the third container.
Diced zucchini, sweet peppers, and bok choy in the forth container.
Pasta in the last container.
First
Place the skillet on a large burner add olive oil and bring it up to heat.
Add the sea salt, fresh ground black pepper, and crushed garlic and sau·té until lightly browned.
Second
Add the diced onions and sau·té until lightly browned.
Third
Add diced mushrooms and sau·té for a couple minutes.
Stir in a 1/4 cup of water and let it simmer for a couple minutes until the mushrooms reduce a little.
Forth
Stir in the diced zucchini, sweet peppers, and bok choy.
Cover the skillet with a lid and simmer for 20 minutes stirring occasionally.
Last
Last add the precooked pasta.
Mix the pasta in with the rest of the ingredients and cover with a lid,
Simmer for 5 minutes or until the pasta is hot stirring occasionally.
Serve
Even if you start cooking the pasta at the beginning this dish is ready to serve in 45 minutes.
