Steamy-saute- Sweet Potatoes With Sesame Seeds and Cilantro Lime Herb Salsa
Steamy saute is an excellent way to cook vegetables! Today I'll be showing you how to steamy saute sweet potatoes with sesame seeds and cilantro-lime herb salsa. This recipe is vegan, nut-free, and gluten-free.
Supplies
Sweet Potatoes
- 2 sweet potatoes
- 1 cup water
- cumin
- dried oregano
- Salt
- approx. 1.5 oz sesame seeds
Herb Salsa
- 3 tbs. lime juice
- 1 tsp. finely chopped shallots
- 1 tsp. finely chopped green onions
- cumin
- salt
- 1/4 cup finely chopped cilantro
Cut Sweet Potatoes
Quarter potatoes lengthwise. Then chop into 1/2 inch pieces. If the slices are too large cut them in half.
Boil Water
In a large saucepan boil 1 cup of water on medium-low. Ensure that the lid is closed so the steam doesn't escape.
Add Sweet Potatoes
Add the sweet potatoes to the water once it has started boiling. Cook till almost tender, about 15-22 minutes. Keep the lid closed and stir every 2-3 minutes.
Drain
When the potatoes are tender, drain any excess water using either a colander or the lid.
Cooking With Oil
Put sweet potatoes back on the burner and add 2 tbsp of avocado oil, 2 pinches of cumin, and 1 pinch dried oregano. Cook for about 5 minutes. Take the potatoes off the heat and let cool.
Herb Salsa
While the potatoes are cooling, mix together 1/4 cup finely chopped cilantro, 1 tsp shallots, and 1 tsp green onions. Then add 1 tbsp avocado oil and 3 tbsp lime juice. Finally, add cumin ( only about 1 pinch) and salt to taste.
Sesame Seeds
Pour 1.5 oz sesame seeds in a shallow bowl. Dip the cooled potatoes in the seeds. Roll sweet potatoes in the seeds. Then remove potatoes.
Serve
Serve in a bowl with some of the herb salsa on top.
