Marinate

If your pangasius fish fillets are frozen, defrost them first. In a glass box, combine salt, pepper, garlic, shallot, ginger and soy sauce together. Place the fish fillets in the box and coat them evenly with the marinade. Let the fish rest in the refrigerator for at least 30 minutes.

Prepare a steamer by filling a pot with water and placing a steaming rack inside. Put the glass box containing the marinated fish onto the rack, ensuring that it sits securely. Turn on the heat and bring the water to a rolling boil.

Once the water is boiling, cover the pot and let the fish cook for approximately 15 minutes. During this time, the fish absorbs the flavors of the marinade, resulting in a delicious infusion.
