Steamed Butter Muffins With Cheese (Butter Puto)
Traditionally, puto or steamed muffins are Filipino snacks made with rice flour and coconut milk, but there are also different kinds made. The butter flavour kind is my favourite and we would make this for special occasions and a staple during fiestas.
This easy recipe makes 20 muffins that are super moist and full of flavour.
Ingredients
- 250 grams plain flour
- 200 grams white sugar
- 1 tablespoon baking powder
- pinch of salt
- 1/2 cup evaporated milk
- 1 beaten egg
- 65 grams melted unsalted butter
- 1/2 teaspoon vanilla extract
- 1 and 1/4 cup water
- Cheddar cheese thinly sliced 1 inch length
Equipment: steamer and silicone muffin moulds
Making the Muffins
Start by sifting the dry ingredients, flour, sugar, baking powder and salt in a bowl. Then pour in the water, evaporated milk, beaten egg, melted butter and vanilla extract. Mix with a whisk for 2 minutes.
Fill the silicone moulds 3/4 of the way then place in the steamer and steam for 15 minutes. I also place a plastic wrap on each muffin while it cooks to prevent the water from getting into the moulds and making them soggy. (5th photo)
When the muffins are cooked, immediately put 2 slices of cheese on top to slightly melt the cheese. Then remove the muffins from the mould after 5 minutes and serve.
