Growing up going trick or treating in a small town, there were always homemade goodies handed out like popcorn balls, caramel apples and cookies being wrapped creatively with a Halloween theme.
This year, I decided to think outside of the box and came up with a monster cookie that was easy to make and rich in taste. These cookies can be decorated using any color of cookie dough and using a variety of sprinkles and eyes.
These colorful monster themed cookies with spooky eyes are perfect for any Halloween party as the kids gobble them up. They are very easy to make and can be decorated with creativity.
The eyeballs make these cookies ‘Spooky’, thus the unique name ‘SpOOkie COOkies (BOO)!

Yield: 24 Cookies
Ingredients:
1 (15.25 oz.) box white cake mix
1/4 cup all-purpose flour
2 eggs
1/2 cup oil
1/3 cup powdered sugar
Food Coloring for Dough (red, blue, yellow & green)
Candy Eyeballs (any size)
Halloween Sprinkles

3 Small Bowls for coloring dough
1 Prep Mat (for dividing & coloring the dough)

4 Sheets of Parchment Paper
2 Cookie Sheets

2 Potholders
2 Silicone Potholders
Serving Plate for Cookies
Mix the Dough
In a large bowl, mix together the cake mix, flour, eggs and oil in this order until smooth.
Mix with electric mixer or by whisk by hand.
Divide the Dough
Divide the dough equally into separate bowls using a large spoon for different colors.
Color the Dough
Pick 3 colors related to Halloween for your cookies.
Here are the three colors for this recipe: Orange, Purple & Green.
Add food coloring according to color chart on the outside of the coloring box if available.
To make orange dough: 14 yellow drops & 4 red drops
To make purple dough: 14 red drops & 10 blue drops
To make green dough: 10 yellow drops & 10 blue drops
Add food coloring to each bowl and mix dough until the dough is one uniform color.
Preheat oven to 350 degrees Fahrenheit. Line cookie trays with parchment paper.
Prepare Dough Into Balls
Use a large spoon (about the size of a heaping tablespoon) to spoon dough into a ball.
Drop dough into a bowl of powdered sugar. Flip the dough over to coat it completely.
Place 6 coated cookie dough balls on parchment paper 2-3 inches apart on baking pan.
Repeat this process 3 times each batch makes 24 spookie cookies.
Note: These cookies will spread and flatten some before they even go into the oven.
Bake the Cookies
Bake 350 degrees Fahrenheit for 10 minutes until edges are just starting to brown and the tops are matte, not shiny. Set timer on oven or microwave for ten minutes.
Place wire rack next to decorating work area.
When timer goes off, use potholders to remove cookie sheet from oven and place on a silicon potholder.
Decorate the Cookies
Immediately press candy eyeballs into cookies while still warm. If you desire, add Halloween sprinkles or fall colors while cookies are warm. Be creative when decorating as these are Spookie Cookies,
Allow cookies to rest on pan for a few minutes. Then transfer the cookies to a wire rack to cool completely.
